Delicious Gluten Free Sponge Cake

Besides using sponge cake to make lady fingers and tiramisu cake, you can use it as a substitute for shortcake. Remember those individual portion cakes you used to find near strawberries in the produce department of your grocery store? Well, you can make a sponge cake version at home. I’ve included recipes for a couple of different versions using strawberry, chocolate ganache, and sweetened whipped cream.

Gluten Free Angel Food Cake

Cake flour is used in angel food cakes because it contains low protein, which means less gluten. This makes baking a gluten free angel food cake ideal! Because cake flour is a finer texture than regular wheat flour, it is extremely important that you use a superfine gluten free flour for this recipe. I used my Gluten Free All-Purpose Flour Blend, which is made up of superfine white rice flour. You'll find the link below. I use it in most of my baking recipes. However, I did not use my Gluten Free Cake Flour Blend recipe in this cake, as it contains leaveners such as baking soda and baking powder, which you do not want to add to an angel food cake. Angel food cake uses egg whites as the leavener, and a bit of cream of tartar to stabilize the egg whites and prevent them from drying out.  It contains no fat, making this an ideal dessert for waistline watchers!

Image: Gluten Free Pumpkin Bead Loaf

This is my first attempt at creating a gluten free pumpkin bread. I used my gluten-free flour blend that I have used successfully on 3 other cakes now, however, the top center never would cook thoroughly, but was just as yummy. I was really afraid the rest would dry out if I cooked it much longer, but you're welcome to give it a try. I couldn't wait until it cooled completely before I cut into it, which is no-no, but well worth it. This gluten free pumpkin bread is just as moist as my gluten free banana bread, and the best pumpkin bread recipe I've ever had gluten free, or not! Enjoy and let me know how yours turns out. I bet these would make perfect muffins.

Gluten Free Apple Coffee Cake Similar to Pastries

First off, this gluten free apple coffee cake is heavenly, with or without the glaze! I recently created a gluten free coffee cake where you can add a jam, pie filling or cinnamon swirl. However, when I made the gluten free apple coffee cake this morning, I noticed it needed a bit more time to bake, as the pie filling is more moist than a thin layer of jam. Therefore, I wanted to ensure you had this information. Enjoy. We did! My hubby is awaiting a cherry one next. Stay tuned!

Image: Gluten Free Chocolate Mug Cake

I'm under deadline on another project but wanted to squeeze in a recent recipe request for a healthier gluten-free mug cake. I chose chocolate this time, as I already have a recipe for a regular Gluten Free Coffee Mug Cake (actual coffee cake). I love coffee mug cake, as they are so easy to make! To make it healthier by using xylitol which is sugar-free, and dairy-free by allowing you to choose the variety of milk. I hope this helps more than just the person who requested it, as it is delicious. I am thinking of substituting some of the all-purpose flour for a little almond flour next time. If you try this idea before I do, please let us all know how it turns out. If you'd like, you can even add some natural peanut butter, or other nut butter, to the top/middle of the batter for a Reese's Peanut Butter Cup flavor. I took one bite while it was fresh out the microwave, and couldn't stop myself...and it was pretty much guilt-free!

Heavenly Gluten Free Pound Cake

This gluten-free pound cake recipe is deserving of a spot in my upcoming cookbook, "Carla's Best 125 Gluten-Free Recipes". I know you'll enjoy it! All of the ingredients come together perfectly to make a lighter and moister pound cake. As with many baked gluten-free goods, baking in smaller amounts achieves surprising results. A tube or Bundt pan creates a narrower cake; therefore, an incredible texture, while keeping its buttery flavor. The crunchy thin crust is a pleasant addition. Serve this cake to a crowd or slice and freeze for when cravings strike.
