After visiting Mexico this summer, I was determined to find out how to make soft gluten free white corn tortillas. I usually buy Mission Super Soft White Corn Tortillas. They are much softer than their yellow corn tortillas, closer to flour tortillas, but with more fiber and obviously no gluten. However, if you prefer freshly made gluten free corn tortillas and arepas, without gum and preservatives, try this simple recipe. The special corn flour is easily accessible online and in specialty markets. You only need to add water and salt. You don’t need a tortilla press to make them; however it works with one. Thin Soft Gluten Free Wraps

These gluten free wraps are soft and pliable, and that’s not all. They are packed with protein. They fall somewhere between a tortilla and a crepe. Don’t allow the fava bean flour to scare you off, if you have tried other bean flours and they were bitter. Fava bean is very mild and not bitter at all. Combining beans with eggs boosts the nutrient values in the beans as eggs are a complete protein (contains all essential amino acids). This recipe is gum-free and grain-free. I already have a few gluten free tortilla recipes: Low-Sodium Gluten Free Tortillas (my first attempt – very similar to Trader Joe’s brand – chewy and a little stiff), Gluten Free Naan Bread (so good, but is thick and calls for instant yeast), and Soft Whole Grain Gluten Free Wraps – Tortillas (when you use Expandex modified tapioca starch these are the best!). Soft Gluten Free Naan (Indian Flatbread)

Naan is luscious Indian flatbread, similar to a tortilla, but thicker. With one simple alteration, you can roll or pat them out thinner to use as tortillas. The flavor and texture are so good that they should be a sin to eat. By far, this gluten free naan is my most raved about recipe. People liken them to their gluten counterpart. La Tortilla Factory makes a Gluten-Free, Ivory Teff Wrap. I have been wanting to go to Whole Foods to pick some up, but just haven’t had the time with all of my other errands while I’m in town. So, my cravings got the best of me, and I created a recipe of my own. They turned out fantastic! And they don’t taste anything like a whole grain gluten free wrap or tortilla.
