Note: If the meringue ever flares up, as it did twice in this instance, immediately shut off the torch and remove it from the meringue. I always torch meringue near a sink so that you can immediately put out any fire. However, near a fire extinguisher would be safer. Read this article I found online for kitchen torch safety. Needless to say, I’m in the market for a new torch.
