Watermelon Ice Cream Sundae

Of course, this watermelon recipe can be made in a bowl or atop a with gluten-free ice cream cones or regular. If using a cone you can decorate the cone’s top edge with frosting or whipped cream. I’m fresh out of my Goldbaum’s gluten-free ice cream cones. I gave them all to my grandkids. However you can have more ice cream in a bowl, which is what I enjoy the most! This not only makes a great 4th of July recipe, but a nice cool treat all summer long. I had so much fun making this! I’ve never scooped such a large watermelon ball before, but it was very easy. Watermelon Cut-Out of in Shape of a Star

This is such an easy and fast gluten free dessert to make! Frost bottom edges with sweetened whipped cream, white frosting, or cream cheese frosting (all recipes below). You can also use canned whipped cream. If desired, add blue food coloring to frosting for decorative stars or leave white. I like to use natural food coloring made by Select Tea. It’s gluten-free and vegan. I left mine white. Adding a single blueberry on top and/or one in the middle of each decoration at the bottom brings color to this dessert. If you’d like, you can frost the entire top of the star and add multiple blueberries and/or other red berries, and skip the decorative frosting, or do both. This recipe can be made low-carb using sugar substitutes. This definitely makes a great 4th of July desserts, and definitely a conversation piece! Happy 4th of July to everyone in the U.S.! I promised everyone, some time ago, gluten free yeast free recipes. Here is my new fave! Miniature gluten free hamburger buns, yeast free! I didn’t think they were going to be very good, as they are a little heavy, but oh my! – They are delicious! My husband and I had 3 as part of an early dinner today. Tender Gluten Free Gourmet Boneless Beef Short Ribs – Sweet & Spicy with Wine

We were given a bit of beef recently, just when I wanted to go back to a heavier chicken diet.  How could we say no, right?  In the batch of meat, were over seven pounds of beef short ribs. I am so tired of making half the ribs in barbecue sauce in my crockpot for my husband and the other half plain because of my tomato allergies. I usually end up using a gluten-free, tomato free Worcestershire sauce. In my attempt to come up with an alternative we both can enjoy I turned to one of my favorite sauces, a balsamic reduction. Then I considered a wine sauce.  Why not combine them and add in some sugar or molasses? I had so many ribs they wouldn’t possibly fit in my small crock pot; therefore, I cooked them on the stove top. They came out so yummy, something I would expect in a fine restaurant. I won’t use any other short ribs recipe in the future.

Gluten Free Cherry Pie

Someone recently asked me if I had a gluten free cherry pie recipe, and it got me thinking. It is my husband’s fave, though I do not care for it. I thought I would make him a gluten free treat and try one of the gluten free pie crust recipes from “Gluten Free Cooking For Dummies®“.  Because all flours measure differently, my dough ended up very crumbly. So, I added a bit of shortening to soften up the dough which makes crusts nice and flaky, too! I only had 2 cans of cherry pie filling, but really needed 3 for my pie pan, but it worked out alright anyway. Please make sure you read the labels of any pie fillings. Fork Tender Gluten Free Pork Ribs and Pulled Pork Recipe

You can serve these ribs as they are (boneless) or you can shred the meat and use it for a pulled pork sandwich because they are fork tender! You will not need a knife for these babies! I’d like to use the term “fall off the rib tender” but they are boneless. I enjoy pulled pork sandwiches with coleslaw atop a gluten-free roll and additional BBQ sauce. Since I am allergic to tomatoes I use my quick and easy homemade gluten-free chipotle sauce and Worcestershire sauce. You may consider using my homemade gluten-free barbecue sauce recipe that I created for my husband which is lower in sugar by using agave syrup and Worcestershire sauce instead of brown sugar. It’s very flavorful and has a hickory taste! Despite my tomato allergy, I couldn’t resist taste tasting the sauce while cooking! Oh, how I miss I good barbecue sauce!

Gluten Free Barbecue Sauce Recipe

Gluten Free Barbecue Sauce

Instead of using bottled sauce for my ribs I created a barbecue sauce recipe using agave syrup which is lower on the glycemic index. I used to make my mother’s old recipe, but she used brown sugar and ketchup. I adapted my mother’s recipe, but instead of using ketchup which is also full of sugar and salt, I used tomato paste. If you want a lower sodium sauce you can use low-sodium tomato paste. I added hickory smoke which gives it a great barbecue taste. I hope my husband enjoys this and you, too! This gluten free chicken fried rice recipe is a great for those watching their sodium and fat intake, as well as being gluten-free. If you are not watching your fat you can use any chicken parts versus chicken breast meat. If you are not on a gluten free diet you can use regular soy sauce. If you are not watching your sodium intake you can use any kind of regular gluten free soy sauce or tamari sauce. If you are vegetarian, you can use scrambled eggs versus chicken. Fast and Easy Homemade Gluten Free Sweet and Spicy Pickle Recipe – Zero Sodium!

Sweet and Spicy Gluten Free Pickles

I have been wanting to make some homemade pickles, which is something I have never done before, when I saw a bag of mini pickles at Costco the other day. I just had to have them! I created an easy pickle recipe that you can either spice up or not with red pepper flakes to your liking, as well as adjust the sweetness. Since our grandkids were visiting this week I was in a hurry and wanted a fast recipe so I opted to make sliced pickles instead of leaving those adorable little things whole.
