I have been wanting to make some yeast raised gluten free donuts, but was so excited when I discovered picarones. They are also risen donuts, but made with a sweet squash (pumpkin in this case) and sweet potatoes. They are also known as Peruvian donuts as they are popular in Peru. You can make these gluten free donuts using fresh or canned pumpkin. Just note that fresh pumpkin tends to vary in moisture and may not turn out the same. Meanwhile, enjoy these delightful treasures. Soft and Chewy Gluten Free Pumpkin Cookies
I must admit, this gluten free pumpkin cookies recipe took 10 different batches to perfect. Now they are perfect! If you desire a crisp bottom, chewy outside, and a soft chewy inside, you bake them for 11 – 12 minutes. The longer you bake them, the crisper the bottom becomes. For a cookie that is soft all over, you bake them for 10 minutes. Soft and chewy was a request of a couple of my Facebook followers. These are very lightly pumpkin flavored. Gluten Free Pumpkin Cheesecake Filled Chocolates
It’s not only trick or treat time for the kids, but us adults desire treats, as well. Imagine sweetened cream cheese, pumpkin, and graham crackers. What do you get? Pumpkin cheesecake! Then wrap them in chocolate and you get heaven in ball! Alternatively, instead of using ground gluten free graham crackers you can ground chocolate cookies. You can make these pumpkin cheesecake chocolates elegant by topping with candy pearls, drops of colored chocolate or another variety of chocolate, or dip the tops in a second color of chocolate.
