Today I provide you with another healthy recipe from Joy Bauer. With only 380 calories, I must say, this gluten free salad is more than a meal! It made me really think how much one can eat, not go hungry, and still lose weight. I skipped the tomatoes due to allergies, but definitely add them if you can. I was in the mood for a new salad dressing, and something that would compliment chicken. Though my chicken was not marinaded, I really was in the mood for honey mustard chicken. So, the next best thing was to create a honey mustard dressing. This dressing can be used as a sauce for many other dishes, besides salad. This gluten free appetizer was a huge hit in our house! So yummy! They disappeared before they had a chance to cool off. The chicken remains moist and the bacon is crisp. Savor the slight smokiness of paprika and sweetness of honey. I couldn’t ask for a better appetizer. Gluten Free German Hot Potato Salad

This is my all time favorite potato salad recipe and potato side dish. My sister started making this about 30 years ago. She hasn’t been able to find the recipe, but did recall the ingredients. Instead of using all-purpose flour, as in a traditional German hot potato salad recipe, I used potato starch. I can’t remember the last time I made this and have lost the recipe, as well. What makes this recipe stand apart from other German Hot Potato Salad recipes is that the apple cider vinegar, combined with celery seed and a little bacon grease. Our entire family loves this recipe so much, we must have had it for about 20 straight years with our Christmas ham (with very few exceptions). It’s hard to believe Christmas is just 3 months away! I had to wing it on the quantities, but it tastes just like I remember – oh so good! Of course, I was always known for increasing the bacon and almost doubling the sauce. What are holidays for, right? This time I made it as the old recipe called for, as I just had 4 slices of bacon. Last night for dinner I just wasn’t up to cooking anything, and wasn’t that hungry, but I managed to make some candied walnuts (I used agave), and threw together this blackberry avocado salad together that I absolutely loved! With the hot weather we’ve been having, I thought I would make a no-bake dessert. Nanaimo bars are a Canadian treat. I substituted the traditional packaged pudding (or packaged pastry cream, depending upon brand) with gluten-free cream cheese (just 2 tablespoons). You can always use your own homemade custard. Mothers and grandmothers used to make these for their kids beginning in the 50’s and 60’s, and some still do. I made them without coconut, due to food allergies. Shredded coconut is usually used in the bottom layer. I substituted coarsely chopped almond meal. You can use regular. I just ground my own. On the 4th of July I had a sweet tooth. Actually, I have had a sweet tooth all week, but not for dessert. I went to the grocery store, hungry, the other day and ended up with a cart full of naturally gluten-free foods, such as gluten-free cocktail onions and raspberry balsamic vinegar. Raspberry vinegar produces a darker, nicer looking meat when grilled. It helps produce those nice, dark grill marks, which every chef desires. Using a raspberry vinegar is a quick and easy trick. Anything with sugar or fructose (all fruit contains fructose) creates a darker crust on meat, whether fried or grilled.
