Fresh out of the oven or cooled, these gluten free snickerdoodles are to die for! Just like traditional snickerdoodles, they are a light, soft, sugary cookie with a crisp, chewy outer shell. The inside is not quite cake-like, but definitely not dense like regular cookies. They are chewier than cake. I surveyed my Facebook followers on how they enjoy their snickerdoodles. Due to the mixed results, I have added several tips at the bottom of this recipe so that you may adjust it according to your preferences. These are made my way. I hope you get to enjoy them your way! Gluten Free Date Bars
These lovely bars are made with either wine, for adults, or with orange juice for the kids. Either way, these gluten free date bars are a wonderful treat. They are similar to their gluten cousins, Fig Newtons. A matter of fact, you can use figs in the recipe, as well as dried apricots. There a few variations that I have created and listed below including adding nuts, using wine (really cannot taste the wine – more like grapes) or orange juice as a reduction/filling, or spicing it up a bit with some ginger.

Gluten Free Vanilla Wafers
I have been wanting to create a gluten free vanilla wafers recipe for sometime now. It’s finally here. Now, you can make that banana cream pie or banana pudding you used to make. I’m thinking of replacing my gluten free milano cookies recipe for this recipe instead. Whether you make them bite size or regular size, they are a treat. They brought back some great memories from when I was young, as well as when my kids were young. There are a couple of variations which you can check out below in the Tips area. I hope you enjoy them.

Flourless Cookies – Pine Nut Cookies
Typically Italian Pine Nut Cookies are made with marzipan or almond paste, however, you may use almond flour / almond meal, ground up, or even ground up pine nuts, as I did. You grind it to the consistency of any nut butter. Flourless cookies are wonderful, usually high in protein, thus lower in carbs. However, carbs still exist in the sugar. You may wish to use a natural sugar substitute, such as birch derived xylitol, if you are watching your carbs closely. Meanwhile, enjoy this pine nut cookies recipe. I definitely did. You can make them to order! Continue reading “Flourless Cookies – Pine Nut Cookies”
