Gluten Free Sweet Potato Muffins

These gluten free sweet potato muffins have the weight and texture of a quick bread, such as banana bread, but perhaps a little lighter. They are very moist, and more importantly, packed with nutritious ingredients which I wouldn’t mind giving my grandchildren. And being that I used xylitol instead of sugar, I look forward to using them as a healthy snack for myself more often. These gluten free sweet potato muffins would make an excellent substitution for cornbread this Thanksgiving, as well. And they are a great way to use left over sweet potatoes! That was my reason for creating this recipe. Enjoy! Continue reading “Gluten Free Sweet Potato Muffins”

Gluten Free Chocolate Peanut Butter Cookies

My first thought when seeing these gluten free chocolate peanut butter cookies was, “Got milk?” And then when I tasted them, my first thought was “OMG! – to die for!” My second thought was “Got milk?” They are chewy, right out of the oven and crisp up a bit upon cooling. And since this gluten free cookie recipe does not call for milk, it is completely dairy-free, if using dairy-free chocolate chips. For those with peanut allergies, substitute the peanut butter for almond butter, or the nut butter of your choosing. For nut and peanut allergies, substitute it with Sunbutter. It’s made of sunflower seeds and makes a great peanut butter replacement. These cookies will surely please all! Enjoy! Continue reading “Gluten Free Chocolate Peanut Butter Cookies”

Gluten Free Fluffy White Frosting

Image: Gluten Free Fluffy White Frosting

Because so many of the cake recipes that call for frosting on this site call for cream cheese, I thought a nice fluffy white icing recipe was in order for those who are not only gluten free, but dairy free. This fluffy white frosting recipe is great because of the color. It is actually white (even with the use of regular vanilla), instead of off-white from so much butter/margarine. If you wish the same white color, but wish to use additional vanilla for flavor, it is suggested to use clear vanilla. There are a few brands that advertise they are gluten free. This fluffy white frosting makes a great wedding cake frosting, too! Enjoy! Continue reading “Gluten Free Fluffy White Frosting”

Gluten Free, Dairy Free, Sugar Free Eggnog Recipe

Image: Gluten Free Dairy Free Sugar Free Egg Nog in Glass

I had never tasted a sugar free eggnog recipe before today, but the holidays are almost upon us and who cannot resist all of that sugar, dairy, chocolate, what have you? I certainly have trouble doing so! I do not have eggnog very often, but when I do, I just cannot seem to stop myself from having a second glass. Heaven knows if we have a holiday dinner and there is left over eggnog, I’m having it for breakfast instead of my healthy protein shake. This year, I just had to get a hold of myself prior to the holidays. This is what inspired me to come up with this sugar free eggnog recipe.

You can double, triple, etc. as needed.

Gluten Free Onion Gravy Recipe

I promised you all my gluten free onion gravy recipe, and here it is. Whether you leave in the onion pieces or puree until smooth, this is an easy, delicious gravy. You can make this sauce virtually any color you chose. If you wish a brown gravy, add a tiny bit of Kitchen Bouquet; use some milk for a white sauce, or leave its natural yellow color from the butter and oil. You may also use all oil instead of half butter and oil. Though butter adds flavor. This is a great onion gravy recipe without having to use any meat drippings. I used it over my Gluten Free Toad in the Hole recipe. Continue reading “Gluten Free Onion Gravy Recipe”

Gluten Free Toad-in-the-Hole Recipe

Being the first time I have made this gluten-free toad-in-the-hole recipe, I did not know what to expect. Toad in the hole is an English recipe which usually contains sausages in a Yorkshire pudding batter. Since the batter turns into a bread-like texture, yet a bit moist, it is usually served with vegetables and onion gravy. I like to keep extra gravy from my beef stew in my freezer. That is what I used for this dish. But knowing I would be short on gravy for my left overs, I whipped up a batch of gluten free, dairy free gravy for the rest. And since then I’ve created an onion gravy recipe, linked below. Enjoy this classic English fave, gluten free toad in the hole recipe! And remember, the proof of the pudding is in the eating! Enjoy! Allergy Free Gluten Free Margarine Recipe

Homemade Allergen-Free Gluten Free Margarine

I was so tired of trying to find a gluten free margarine or gluten free margarine recipe that was both soy-free and corn-free that I decided to create one myself! This recipe is also dairy-free. It’s so nice to know that it is free of chemicals, as well. Though I use some palm shortening in this recipe I would imagine you can use red palm oil (red has the most health benefits, and it is more of an orange color), though it hardens more than palm shortening. And palm shortening is less expensive than red palm oil. I used organic palm shortening. If you wish a deeper yellow color we all so used to, add a pinch of turmeric. I chose palm shortening for its color, softness and neutral flavor. When my husband tasted it, I asked him, “What does this taste like?” His answer was, “Margarine.” I was a happy camper! I do taste a hint of olive oil, but that’s a good thing! Enjoy! Continue reading “Allergy Free Gluten Free Margarine Recipe”

Gluten Free Chocolate Cake Recipe with Caramel Sauce and Nuts

I get a lot of requests for a gluten free chocolate cake recipe. And I had run across a recipe for caramel sauce which made me think of a cake recipe my sister used to make. It had a caramel-like sauce and walnuts placed beneath a chocolate cake batter in a bundt pan. Often some of the caramel and nuts would stick to the pan, but it was so so good! I wanted to convert this to a gluten free chocolate cake recipe, but she has lost the recipe. I’m sure she’ll find it one day but stored it away once the caramel sauce wasn’t turning out right. She thinks the corn syrup is made differently nowadays. Continue reading “Gluten Free Chocolate Cake Recipe with Caramel Sauce and Nuts”

Dairy Free Corn Free Gluten Free Caramel Sauce

To make this gluten free caramel sauce, it took me 4 tries. I created 2 different recipes with 2 different cooking methods, and finally, the last one was a charm! Two I had to toss, but the one that was too thick I ended up using anyway. It wasn’t that bad but on its way to candy! If you have allergies or other intolerances, this recipe should fit the bill! This gluten free caramel sauce will work well on ice cream or for cakes and pies. Enjoy! Continue reading “Dairy Free Corn Free Gluten Free Caramel Sauce”
