After tasting the new Trios Gluten Free Girl Scout Cookies, I knew those who were not able to find them in their area would have to taste these amazing cookies. I got right on it today. After several tweaks on baking times, height of dough, amount of invert sugar and butter, I finally did it. I knew on the last 2 batches that I baked, that I had achieved a copycat recipe of the Gluten Free Girl Scout Cookies, Trios! Again, I was thinking, “OMG!” I’ve only used that term twice on this blog, but they are truly amazing. When my gluten-eating husband gets home, he’s going to flip out with joy as he loved the Trios we purchased and they were all gone. How to Make Invert Sugar: The Secret to Moist Cookies
I am interested in making a copycat recipe of the Gluten Free Trios that some of the girl scout troops are selling this year. The Trios are just amazing cookies! However, I noticed that one of the ingredients is invert sugar (the consistency of high fructose corn syrup, but different). It keeps baked goods moist without crystallizing. Honey will work the same; however, invert sugar does the job without imparting a honey flavor. Not having on hand, I decided to make some myself. I hope you appreciate the recipe, as it is extremely easy to learn how to make invert sugar. However, you can also purchase invert sugar online. Spiced Gluten Free Carrot Cake Recipe
I really needed a smaller size carrot cake, as my famous Gluten Free Carrot Cake Recipe is a bit too much for us lately. Using a 9-inch round pan versus an 8-inch makes for a lower cake, which fools us psychologically into thinking we’re still having a large piece. The main thing I changed in this new gluten free carrot cake recipe is making a smaller batter and making it moister and spicier. There was a bit too many crumbs on the recipe in the above link. This time, it’s perfect. A matter of fact, it is so good, you don’t even need frosting. It’s plenty of sweet and extremely moist. I used lots of ground cloves which I really enjoy and I think you will, as well. It tastes closer to pumpkin bread. If pumpkin spices are not your cup of tea, omit the cloves. Enjoy! Apple & Beet Juice Jelly Recipe
During The Great Depression, a beet juice jelly recipe was something people turned to save money. It was inexpensive to make versus using fresh fruit. I’ve been on this beet kick, whether I steam fresh beets or use canned. Canned beets contain about 1/2 cup of juice ready to use in this recipe. I save it up to make beet juice jelly, or in this case, apple beet juice jelly. Today, beets and its juices are consumed for multiple health benefits from fighting inflammation to cancer. I use a combination of apple cider and xylitol (a sugar substitute) to sweeten it, making it almost guilt free. Then add your favorite extract to create a unique flavor. The texture is perfect, not stiff like jello. Continue reading “Apple & Beet Juice Jelly Recipe”
Crunchy Baked Gluten Free Onion Rings
Bake onion rings for those you love! If you have about 45 to 60 minutes, you must try these crunchy, baked gluten free onion rings. I not only bread them in gluten free breadcrumbs, but I enjoy adding Italian seasoning and grated Parmesan cheese. Seasonings are optional, though. The method of this recipe is so successful at creating crunchy onion rings, that you’ll swear they are deep-fried. If you do prefer fried onion rings, see Chef Robert Landolphi’s Tri-Spiced Onion Rings and Dipping Sauce Recipes. They’re super! Continue reading “Crunchy Baked Gluten Free Onion Rings”
Skinny Gluten Free Chocolate Cake
I created this gluten free chocolate cake recipe with coconut flour when I received a sample of CooKoo for Coconut Organic Flour. My first thought was that one sure way to think healthy and skinny is to increase the fiber in your diet and consume healthier fats. Coconut flour is the perfect way to do both. A matter of fact, when you bake with coconut flour it is so packed with fiber, it acts like a sponge and absorbs much of the liquid. Therefore, you cannot substitute it cup for cup with gluten free all-purpose flour, but you can definitely replace up to 50% with little adjustments, and less with no adjustments at all. See the below, simple recipe. Enjoy it your way! Continue reading “Gluten Free Microwave Popcorn in Paper Bag”
Stevia Sweetened Homemade Almond Milk Recipe
Up to a few years ago, I was making a homemade almond milk recipe created by Ani Phyo, date sweetened almond milk. However, due to its high carbohydrate content, I switched to unsweetened. Recently, I began adding a bit of stevia to the recipe. I finally found a brand that isn’t bitter, NOW Better Stevia. Now my almond milk is perfect!
Update: I also enjoy using Trader Joe’s Liquid Organic Stevia. Continue reading “Stevia Sweetened Homemade Almond Milk Recipe”
