These gluten free wraps are soft and pliable, and that’s not all. They are packed with protein. They fall somewhere between a tortilla and a crepe. Don’t allow the fava bean flour to scare you off, if you have tried other bean flours and they were bitter. Fava bean is very mild and not bitter at all. Combining beans with eggs boosts the nutrient values in the beans as eggs are a complete protein (contains all essential amino acids). This recipe is gum-free and grain-free. Starch-Free Gum-Free Leavener-Free Gluten Free Cake Recipe

I am aware that many individuals on a gluten free diet are watching their intake of starch. In addition, some individuals have trouble with gums. This gluten free cake recipe is free of all starch (potato, tapioca, arrowroot, and cornstarch) and gums (xanthan, guar, etc). It is also free of leaveners such as baking soda and baking powder. Obviously, the cake still calls for sugar, which is still high in carbohydrates, but you save a ton of carbs and have added protein from the eggs in this gluten free cake recipe. It is light due to the whipped egg whites that are folded in towards the end. I’m not keen on using rice flour in cakes because it is usually gritty, unless it is a superfine rice flour. This gluten free brownies recipe contains marshmallows and walnuts like any rocky road dessert. The marshmallows melt into the batter while it bakes, creating a lighter, almost cake-like texture, but chewier. Wine and Cheese Gluten Free Cracker Recipe

I am honored to present this gluten free cracker recipe that I developed for WholeVine. They offer grapeskin and grapeseed flour made from wine grape remnants as well as gluten free cookies. A couple of months ago I surveyed my Facebook followers for their favorite wine, and Riesling was the winner. So, I used Riesling grapeseed flour in this gluten free cracker recipe. However, they offer several other varieties, including grapeseed flour. Just be sure not to use grapeseed flour in this recipe as additional liquid ingredient would be required. I have had several requests for healthy gluten free recipes. With summertime here, I thought those of you with children would appreciate some ideas for healthy gluten free snacks.  I remember when I first began my gluten free diet in 2005, I tried a rice cake, and could barely finish it. It was so dry and tasteless. I resorted to snacking on watermelon instead. Things have changed, but I have learned different ways to consume rice cakes. Gluten Free Cream of Mushroom Soup

While there are brands of gluten free cream of mushroom soup, making a batch of homemade soup is always preferred. It contains more flavor and is healthier as you can control the amount of cream, sodium, etc. This soup may be made using chicken broth or mushroom broth made by soaking dried mushrooms in water (see Tips section). Gluten Free Shortbread Cookies Neapolitan-Style

Since it is summertime and the kids are on vacation, I though you’d appreciate colorful gluten free shortbread cookies. They are flavored in vanilla, almond, and chocolate, but you can choose other flavors and colors if you desire. Neapolitan is an Italian favorite, just like the ice cream. Gluten Free Chinese Food at Home: Moo Shu Beef Recipe

I originally went gluten free in 2005. I have long since given up on eating out at Chinese restaurants other than PF Chang’s. They serve sumptuous gluten free Chinese food, but most dishes are extremely high in calories. So, I often make my Chinese food at home instead. Moo shu is usually served with pork; however, I used beef in this recipe. You may serve it over rice or make it low-carb by serving it over sauteed vegetables. You can even use it to stuff a gluten free tortilla or pita pocket. Made with top sirloin, it is exceptionally tender and delicious.

Gluten Free Anadama Bread

This gluten free anadama bread recipe is a variation of the Anadama bread made years ago in Massachusetts. It was a corn meal and wheat-based bread lightly sweetened with molasses. Though it existed prior to the 1840s, a baker used to deliver the bread to households in in the late 1800s in Massachusetts. It was later baked by a restaurant owner until 1956, and then by a bakery on Cape Ann in Massachusetts until 1970. Other bakeries offered anadama bread for several years later, however, it eventually lost its popularity. This gluten free anadama bread is similar, but uses rice flour instead of wheat. If you are intolerant to rice flour, you may substitute it with sorghum flour. This bread makes a wonderful breakfast bread as it tastes a bit like an English muffin. Chocolate Gluten Free Crepes

Crepes are a thin, moist pancake, and usually richer due to added butter. However, this gluten free crepes recipe may be made with healthier by using margarine, dairy free spread, and dairy free milk, if desired. For darker crepes, use Dutch processed cocoa (Rodelle brand is gluten free). It is not acidic like pure cocoa powder. Meanwhile, enjoy these gluten free chocolate crepes.
