Gluten Free Lemon and Coconut Shortbread Cookies
There’s nothing like a good shortbread cookie with a cup of tea. We used to devour one of my former client’s gluten free lemon shortbread cookies (Simply Shari’s), but I can’t have them anymore because they contain tapioca and citrus. My husband still enjoys them, though. Meanwhile, since my flour blend recipe calls for tapioca or cornstarch, I can make my own shortbread cookies. My hubby misses lemon desserts since I realized I was allergic to it. So, I’m trying to make enough to freeze for him to enjoy!. I hope you enjoy them as well.

Gluten-Free Egg-Free Peanut Butter Cookies
I am big on nut butter cookies. You can use peanut butter or almond butter, whichever you prefer. I have made Flourless Peanut Butter Cookies, Crunchy Peanut Butter and Coconut Cookies, Sugar Free Peanut Butter Cookies with Oatmeal, Chocolate Peanut Butter Cookies, Dairy-Free Peanut Butter Cookies Using Cookie Mix, and now, gluten free egg free peanut butter cookies with teff flour. They’re all wonderful and some are considered grain-free as teff and buckwheat are seeds, not grains. However, my all-time fave is Gluten Free Nutter Butter Cookies Recipe (Dairy-Free). Those are a bit more time-consuming than this new recipe. I enjoy this new one for its nutritional value, ease of preparation, and flavor. I hope you enjoy them, as well. Copycat Gluten Free Trios Girl Scout Cookies (Flourless)
After tasting the new Trios Gluten Free Girl Scout Cookies, I knew those who were not able to find them in their area would have to taste these amazing cookies. I got right on it today. After several tweaks on baking times, height of dough, amount of invert sugar and butter, I finally did it. I knew on the last 2 batches that I baked, that I had achieved a copycat recipe of the Gluten Free Girl Scout Cookies, Trios! Again, I was thinking, “OMG!” I’ve only used that term twice on this blog, but they are truly amazing. Chewy Gluten Free Vegan Oatmeal Raisin Cookies with Superfoods
Nature’s Path just came out with three flavors of their new Qi’a™ Superfoods Hot Oatmeal. Flavors include Creamy Coconut, Superseeds & Grains and Cinnamon Pumpkin Seed. I love the Superseeds & Grains because it has a bit of crunch. It contains rolled oats instead of quick-cooking oats like so many brands. They asked me to create a recipe using my favorite flavor for their Pinterest Oatmeal Month (January) contest and here it is, a gluten free vegan oatmeal raisin cookies. They are so good that when I made them (just before dinner), I ate three and couldn’t eat my dinner. It was one of those nights…eat dessert for dinner and a small dinner for dessert. Mind you, I am not on a dairy-free or vegan diet, yet they still met my requirements for a chewy cookie. Enjoy!
