Spinach Rice

This spinach rice dish may be made with an Indian flare or a Chinese flare. Either way, it’s delicious. I chose to hide the bitter taste of spinach in this recipe. No bitterness at all! If anything it tasted a bit creamy, though, it is dairy-free. For a Chinese flare, use gluten free soy sauce. For an Indian flare, use butter and turmeric. If not egg tolerant, or vegetarian or vegan, skip the eggs. This recipe is very forgiving on amounts and ingredients. Gluten Free Mexican Casserole (TexMex)

GF Mexican Casserole

I was going to make pupusas which contain the same basic ingredients as this gluten free Mexican casserole, but you have to make patties out of the cornmeal and stuff each one individually, seal it up and then fry them. Being lazy, I thought, “Why not just make a one dish casserole?” And I’d prevent the higher fat fried food, as well! This dish can be made with leftover ground beef or bison, chopped chicken or turkey, tender chopped beef, and more. Add cheese to the mixture, or not. I added mine on the time to keep some form to the casserole. It was delicious, but the key is using black refried beans instead of regular. Enjoy! Fried Bananas (Naturally Gluten Free)

Don’t know what to do with over-ripened bananas? Make fried bananas! Fry them up in about 5 minutes and top them your favorite topping or the buttery sweet sauce straight from the pan. It’s truly an easy gluten free dessert recipe you cannot go wrong with. It’s a non-alcoholic version of bananas foster. Next time I make this recipe I’d like to try dredging the cut side of the bananas in almond flour before frying. That just sounds perfect to me. Wish I would have thought about it sooner. Enjoy! Chocolate Gluten Free Caramel Sauce

The consistency of this gluten free caramel sauce is much like the hot fudge for ice cream you can purchase in jars. However you may heat it and thin it out with additional milk, if desired. It calls for my gluten free dulce de leche recipe (thick, rich caramel sauce), but you can also purchase dolce de leche already made. Hershey’s makes one that is gluten free. Once you have your dolce de leche made or purchased, this chocolate caramel sauce may be made, literally, in one minute. Someone once said that the only thing they would trade chocolate for is dolce de leche. Well, I wish they could taste this. It’s heaven on a spoon! I keep hearing rave reviews about every homemade dulce de leche recipe (thickened, sweetened milk). I even read one review that stated, “the only thing I would trade chocolate for.” I knew I just had to make some. It’s much like a caramel sauce, but not as sweet and without the concern of barley malt sometimes found in caramel coloring. However, caramel coloring is usually made from corn. Flank steak is very versatile, and this is a very easy gluten free dinner recipe. You may fill it with just about anything your heart desires. This particular recipe calls for fresh spinach, red bell pepper and crumbled blue cheese. Yes. Blue cheese is considered gluten free now. However, the facts still remain uncertain for some. Therefore, you may wish to visit the Gluten Free Product List to find one that is gluten free. You may find that your local grocery store chain may have some already made up. High Protein Gluten Free Crepes – Blintz – Cheese Rolls (Flourless)

I needed to create a cheese rolls recipe, often known as blintz, using tapioca flour starch for an eHow video and thought I would include dairy-free options. Though you may use cow’s milk for a creamier crepe, dairy-free milk or even water will work. I filled my crepe with chopped sauteed Swiss chard with garlic, a mixture of sauteed onion and red bell pepper, topped with a little Gluten Free Bechamel Sauce. Though these are high in egg, they do not taste eggy. Fill with anything sweet or savory. A crepe filled with cottage cheese is known in the Jewish community as a blintz. Others fill them with cheese and roll them up like a burrito around all sides and bake until warm. Usually, they are then topped with a fruit sauce. Gluten free crepes are like an empty canvas. Gluten Free Bechamel Sauce Recipe (Basic Gluten Free White Sauce)

Bechamel Sauce Without All-Purpose Flour

One can use this gluten free bachamel sauce (pronounced “bay shoe mel) as a base for any cream sauce. You may add spices, or pureed roasted red peppers, cheese, and more. Often times, when using potato starch to thicken sauces it tends to thin when reheated. I used tapioca starch in my old recipe, and now a new thickener that stays thick. What will you use to flavor this sauce? Be creative! Make a chili bechamel and stuff some crepes with ground beef and sauteed onion and peppers. This sauce really is a blank canvas.
