Gluten Free Xanthan Gum Substitutes

In years past, you’d mainly find xanthan gum and guar gum on most gluten free product labels. Nowadays you’ll find newer ingredients such as arabic gum, formally known as gum arabic. Arabic gum is a natural gum made from the hardenedĀ sapĀ of acacia trees found in Africa and Australia;Ā Acacia senegal trees, found in Africa, Pakistan and India; andĀ Acacia seyal trees, where the gum is used to treat or prevent several ailments, including digestive issues and high cholesterol. Gum arabic isĀ a soluble dietary fiber with unique properties, and is derived of 80% fiber. Continue reading “Gluten Free Xanthan Gum Substitutes”

Gluten Free Salisbury Steak

Image: Gluten Free Salisbury Steak

I was in a hurry and defrosted some steak, thinking it would be the fasted thing to make. Then I decided that plain steak, whether barbecued, grilled or fried, just didn’t appeal to me. I haven’t had a salisbury steak in decades, and have never made one myself. So I decided to make a gluten free salisbury steak recipe for this blog, as it is aĀ classic American dish. When my husband tasted it he said it was delicious, and added, “Did you notice that I said ‘delicious’? I usually say something’s good. That was delicious!” So, if you and/or your family enjoys a bit of a sweet sauce, you’ll love this recipe, as well. Enjoy! Continue reading “Gluten Free Salisbury Steak”

Gluten Free Oyster Crackers

Image: Gluten Free Oyster Crackers

It’s been months since I received a request for a recipe forĀ gluten free oyster crackers. I finally had the courage to give it a try. With very few gluten recipes to go by, I am very happy with the results. I have provided dairy-free and vegan options, though the results will vary depending upon the ingredients you use. Mainly the browning amount will change. Though if you were to use whole milk, it would make them a tad bit softer, yet more flavorful. I have provided the ingredients I used, and in parenthesis the alternatives. Get that clam chowder ready for this fall and enjoy it with these gluten free oyster crackers! Gluten Free Funnel Cake

One of my Facebook friends asked me if I had a gluten free funnel cake recipe. I didn’t, but it intrigued me, as I had never made one, or tasted one before. I headed on over to one of my favorite chef’s, Alton Brown, to see how he made them. You can watch hisĀ Funnel CakeĀ video. Either click on the photo with the arrow or the Video tab above the recipe.Ā Funnel cakes are usually served at fairs, carnivals and street vendors. If you’re missing them now that you’re gluten free, try making this recipe at home. I must say, they are very addicting! Continue reading “Gluten Free Funnel Cake”

Gluten Free Oat Bread (or Sorghum)

Image: Gluten Free Oat Bread

I had posted a link to the Gluten Free Prairie Oat Bread I had developed for Gluten Free Prairie awhile back on my social media channels. However, that gluten free oat bread recipe was developed specifically for Gluten Free Prairie Oats, as their product produces a higher rise and a lighter bread. So, I thought you’d all appreciate a similar oat bread recipe which included dairy that can be used with any gluten free oats. And here it is!Ā Using dairy guarantees a higher rise and less, if not any, shrinkage. If you’d like to watch a video of a similar recipe, see the older version of my Dairy-Free Gluten Free Oat Bread (or Sorghum) Recipe. I hope you enjoy this recipe. My husband loves it, and he eats gluten! Continue reading “Gluten Free Oat Bread (or Sorghum)”

Gluten Free Baked Beans

Image: Gluten Free Baked Beans

My husband signed me up to bring baked beans to the family reunion. Therefore, I made gluten free baked beans. I’m allergic to tomatoes and haven’t had Van de Camp beans in ages, as it has tomatoes. However, Bush’s baked beans are tomato-free. Yes! I haven’t made these in decades! My husband’s idea was for bacon to be added. And since I’m a worry-wort as far as never making enough, I went for it, as it added volume to the recipe. And I’m really happy that I did, as it was a perfect addition, as far as flavor goes. And you skip the bacon if you’re watching your weight or cholesterol levels. The onion, garlic and bell pepper provides enough flavor. I hope you appreciate this recipe. My husband was delighted! Gluten Free Rosemary Chicken

This rosemary chicken is another healthy, gluten free recipe contributed by Joy BauerĀ from her celiac disease recipe collection. Whether you grill it outdoors or use a grilling pan, this chicken recipe is almost like having breaded chicken. It has a wonderful crunch to it. Yet there are no bread or bread crumbs involved, making it low in carbs. And because you don’t use much oil, it’s low inĀ calories, as well. It’s so simple to make and flavorful, I’ll be making this more often on weeknights, and lazy weekends. Check out my photo below. And my hats off to Joy for this wonderful recipe. Thank you, Joy! Gluten Free Almond Paste and Gluten Free Marzipan

Image: Gluten Free Marzipan

Needing some gluten free almond paste for an upcoming recipe that I’m creating, I decided to make my own. Though you may grind your own blanch almonds, which I did, you will find that most blanched almond flour has a smoother texture than freshly ground almonds from a food processor. I chose to use agave syrup in this recipe, as it react much slower in your blood stream than honey or sugar. Most sweeteners spike your blood sugar levels. Many people now are borderline diabetics that agave really is a smarter choice. This almond paste is not very sweet, therefore, you may add a tad bit more agave, but not too much or you’ll be on your way to making marzipan instead. As an alternative you may substitute the agave with honey. I love that this almond paste recipe can be made in about 10 minutes. Continue reading “Gluten Free Almond Paste and Gluten Free Marzipan”

Blueberry Sauce Using Powdered Sugar For Gluten Free Desserts

Image: Gluten Free Blueberry Sauce

All blueberry sauce recipes may not be gluten free, but most are, provided you use a gluten free starch. Most blueberry sauce recipes call for starch, whether cornstarch, or possibly tapioca or potato starch in a gluten free blueberry sauce recipe.Ā When using the recipe below, no starch is needed, as it is already included in the confectioner’s sugar (powdered sugar). Most powdered sugar you find in the supermarkets contain cornstarch. If you’re corn intolerant, or like to avoid GMO (genetically modified engineered) products, and you’re fortunate enough to live near a Trader Joe’s store, check out their Organic Powdered Sugar. It is made with tapioca starch, and a less refined sugar, evaporated cane juice. Continue reading “Blueberry Sauce Using Powdered Sugar For Gluten Free Desserts”
