Rice with Basil and Candied Ginger Recipe

I searched for a candied ginger recipe online, but found mostly recipes on how to make candied ginger. So, I created my own! We really enjoyed this. I served it with gluten free chicken sausages made by Full Circle. They contain no MSG or nitrates which is very hard to find in a sausage. They have many other advantages, as well. I’ll see if I can get them to sponsor a giveaway. Meanwhile this rice and candied ginger recipe was wonderful. It’s not hot on the tongue, just a kick in the back of your throat. Enjoy if you like spicy food! Continue reading “Rice with Basil and Candied Ginger Recipe”

Gluten Free Pop Tarts – Style Pastries

Image: Gluten Free Pop Tart

Last month one of my Facebook friends asked me for a gluten free pop tarts recipe. I created this one for her. I filled one with chocolate ganache that I already had on hand, and the chocolate held up very well, even when fresh out of the oven. It did not ooze out of the pastry once cut. The others I filled with orange marmalade (the best!). Another I made sweet and savory by using a hot and spicy raspberry filling straight from a jar. The last I filled with a sweet walnut paste that I use in my walnut butter cups. Loved them all!

Update: You may also use gluten free pie filling. Comstock brand and Wilderness brands are gluten free. Continue reading “Gluten Free Pop Tarts – Style Pastries”

Stuffed and Breaded Mashed Potato Gluten Free Empanadas – Croquettes

Image: Gluten Free Breaded Mashed Potatoes

These lovely gluten free empanadas are made from mashed potatoes, stuffed with sauteed onion, green pepper, garlic and cheese (or other filling), breaded, and then deep-fried. I cannot tell you how crunch these were!-just wonderful! And they only take 80-90 seconds to fry! You can fill them whatever you desire. Just be certain that if you use cheese to shred the cheese because chunk do not melt very quickly. Make them ahead of time and fry them up right before you serve your meal. Who knew gluten-free empanadas could be so versatile! Enjoy! Continue reading “Stuffed and Breaded Mashed Potato Gluten Free Empanadas – Croquettes”

Chocolate Sugar-Free Gluten-Free Donuts Doughnuts (Baked)

These are my favorite gluten free donuts, chocolate, chocolate and more chocolate! I had run across the cardboard wrapper that surrounded my donut pan and had been craving them, as I see it quite often. My husband’s favorite type of donuts are chocolate, and he’s coming home today from out of town. I thought what better way to greet him than have chocolate gluten free donuts awaiting him? Well, the first batch I forgot to add the milk, which caused them to be too dry. They already had been placed in the oven when I realized it. Gee, where was my mind that day? Well, I played around with 2 different batches today, and finally achieved success! Enjoy! And if you’re dairy-free, see “Tips” for a great dairy free ganache. Kid-Friendly Gluten-Free Meatloaf

Gluten Free Kid-Friendly Meatloaf without Salt

Though I am allergic to ketchup, this is my husband’s favorite meatloaf recipe. And though my husband is not on a gluten-free diet, I make him this gluten-free meatloaf. It can be adjusted to meet your dietary needs. Egg replacer may be used instead of the egg; low-sodium ketchup; replace the ketchup with a natural sweetener such as homemade or store-bought plum sauce, etc. This is the only meatloaf my children would eat when they were young. It’s my mother-in-law’s recipe which she originally adapted from the Quaker Oats container. Enjoy this flavorful kid-friendly gluten-free meatloaf! Udi’s Style Gluten Free White Bread Recipe

Image: Copycat Udi's Gluten Free White Breadd

A couple of days ago I made my first attempt at making a copycat recipe for an Udi’s-style gluten free white bread recipe. It was a flop. Today I took another stab at it and created a decent gluten free white bread recipe! Yeah! It’s not perfected yet but still tasted wonderful, even after it cooled. I used many of the ingredients which Udi’s white bread contains, however, the rice flour is just a little grainy. You can’t notice it in a sandwich, but you can notice it a little when eating it plain. I’d really rather use sorghum flour instead of rice flours, but just had to give this a go. Meanwhile, the texture of this bread is wonderful! -similar to sourdough sliced bread. It has that Udi’s chew, yet soft. And this recipe makes a much larger loaf than Udi’s white sandwich bread. I also added some substitutes for corn-free dieters. Enjoy my gluten free white bread recipe! Continue reading “Udi’s Style Gluten Free White Bread Recipe”

Quick and Easy Garlic Mashed Potatoes

Looking for a side dish that is fast, easy, tasty and good enough to serve to guests or your family? Why not speed up your regular process for mashed potatoes by adjusting 2 steps and make garlic mashed potatoes? So many of us have very busy lives and need ways of speeding up the cooking process. In addition, I keep hearing from some of my readers that they make instant mashed potatoes. Why not go the fresh route instead? You can make mashed potatoes for 4 in as little as 20 minutes, if you leave on the peel, otherwise about 30 minutes. The smaller you cut the pieces of potatoes, the faster they cook. And if you’re a garlic mashed potatoes lover, simply adding whole cloves of garlic to your potatoes while they boil will create creamy garlic mashed potatoes. If you haven’t heard of Udi’s gluten free bread, you’re missing out on a great textured gluten free bread that is also dairy-free. However, if you’re into gluten free baking or avoiding processed food, this recipe may help you. It is the softest gluten free bread I have made thus far, and works wonderful for sandwich bread, as well as kid-friendly. Nut-Free Dairy-Free Egg-Free Gluten Free Candy Corn

Halloween is almost upon us and there are many parents who are looking for a gluten-free candy corn made in a facility without gluten and nuts. Can’t find one? Make your own! This recipe is an adaption of the Best Allergy Sites’ Peanut Free Candy Corn – Egg Free Gluten-Free Candy Corn Recipe to also make it dairy-free. I substituted the butter and dry milk powder with other ingredients, and removed the vanilla. Candy corn doesn’t usually contain vanilla, and if you use a dark vanilla it will change the color of the candy. Hope you have some kids to help you make this fun gluten-free Halloween candy! I halved the recipe when I made it, as I had no help with mine. Have fun! Continue reading “Nut-Free Dairy-Free Egg-Free Gluten Free Candy Corn”

Gooey Gluten Free Brownie Recipe

Gooey Gluten Free Brownies Recipe

Tropical Traditions sent me a jar of their gluten-free organic brown rice syrup to try. My first thought was either to use it in an ice cream or in a baked dessert. Brownies, I thought! Oh, I couldn’t get them out of my mind! I already have a couple of gluten-free brownie recipes, however, I really was looking forward to making a healthier one, and one that was super gooey! I performed a search online for brown rice syrup recipes and stumbled upon just what I had in mind, a brownie recipe made with brown rice syrup! I converted it to gluten-free brownie recipe and 1 1/2 times’ed the recipe, as it originally made such small brownies. So, here it is – my newest gluten-free brownie recipe. It’s ooey, gooey, sticky and tastes almost like a chocolate caramel. I added a bit of flaxseed meal to make it a little more healthier, but using organic brown rice syrup was such a great start. Brown rice syrup may look like agave, but is barely sweet, and especially when this recipe is made with bittersweet chocolate. Definitely a decadent delight. Enjoy! And stay tuned in tomorrow for the Tropical Traditions brown rice syrup giveaway with 5 winners! Continue reading “Gooey Gluten Free Brownie Recipe”
