This gluten free sweet and sour chicken recipe was adapted from a recipe in Food and Wine magazine. The sauce may be made thick or more saucy and the sauce may be pureed, if desired. My version is lower in calorie and fat, as it is skinless. Serve it atop brown or white rice. Either way, this a gourmet treat, like no other gluten free sweet and sour chicken you’ve ever had! No Rise Egg Free Gluten Free Bread or Rolls
I had a request for an egg free gluten free bread and decided to create this one. Though it is not dairy free, you may be able to experiment with it on your own. In deciding in which direction to take, I ran across a gluten free buttermilk bread recipe which only called for starches, and no need to rise, though it contained yeast. I was very curious how this would turn out. I tweaked it a bit before experimenting and ended up with what I believe to be the most flavorful white gluten free bread yet. I did not allow it to rise, though next time I definitely will, as it is just a bit heavy, but perfect for a French loaf or rolls. I didn’t care for the heavyweight in the sliced loaf, though it is definitely kid-friendly. Fresh out of the oven, it is to die for! The French loaf crust was a bit crunchy and the crust on the rolls was soft. Enjoy!

Because the best gluten free dough is closer to a batter rather than a dough, it is very difficult to achieve a braided dough in a gluten free challah recipe. And since the braids in challah represent unity, I thought a fluted bundt pan may due the trick nicely, as the sections appear to be a representation of unity. However, you cannot use the bottom of the bundt pan as the top of your challah, since it is impossible to add the egg wash and achieve a nice browning from the bottom of the pan. After rising I attempted to cut some slices in the top to achieve a braided look, but it did not rise any more during the baking process, therefore, does not look braided. Not to mention the slits on the top did not look like a braid to begin with. I believe making the slits actually prevented further rising. I think I’ll try making slits in the dough prior to rising next time. Continue reading “Gluten Free Challah Recipe”
Gluten Free Fried Bananas
Don’t know what to do with over-ripened bananas? Make fried bananas! Fry them up in about 5 minutes and top them your favorite topping or the buttery sweet sauce straight from the pan. It’s truly an easy gluten free dessert recipe you cannot go wrong with. It’s a non-alcoholic version of bananas foster. Next time I make this recipe I’d like to try dredging the cut side of the bananas in almond flour before frying. That just sounds perfect to me. Wish I would have thought about it sooner. Enjoy! Chocolate Gluten Free Caramel Sauce
The consistency of this gluten free caramel sauce is much like the hot fudge for ice cream you can purchase in jars. However you may heat it and thin it out with additional milk, if desired. It calls for my gluten free dulce de leche recipe (thick, rich caramel sauce), but you can also purchase dolce de leche already made. Hershey’s makes one that is gluten free. Once you have your dolce de leche made or purchased, this chocolate caramel sauce may be made, literally, in one minute. Someone once said that the only thing they would trade chocolate for is dolce de leche. Well, I wish they could taste this. It’s heaven on a spoon! Gluten Free Dulce de Leche Recipe (Caramel Sauce)
I keep hearing rave reviews about every homemade dulce de leche recipe (thickened, sweetened milk). I even read one review that stated, “the only thing I would trade chocolate for.” I knew I just had to make some. It’s much like a caramel sauce, but not as sweet and without the concern of barley malt sometimes found in caramel coloring. However, caramel coloring is usually made from corn. That’s another thing I like to avoid when at all possible, corn, and especially corn syrup which is sometimes called for in a dulce de leche recipe. If you’ve tried different brands of gluten free all-purpose flour and were disappointed with the results or said to yourself, “I guess this is good for gluten free” then you’re in for a pleasant surprise. Delicious Gluten Free Chinese BBQ Pork (Soy Free and Tomato Free)
This Chinese BBQ pork recipe may be made soy free when using my soy free barbecue sauce recipe which calls for my soy free soy sauce recipe; or with the use of any gluten free soy sauce or barbecue sauce. Traditionally, Chinese BBQ pork does not call for tomatoes or ketchup, though some use it. This recipe is tomato free. And if you’re not on a gluten free diet, of course, you may use any brands you desire. This recipe calls for a slow cooker (crockpot), and may be followed by broiling the meat, which is optional. As you can see in the photo that it is sticky, and you may make it crisp on the outside, if you wish. No matter how you prepare it, in the end, it is flavorful, inside and out. I made this especially for my experiment with gluten free egg rolls. This Chinese BBQ pork recipe truly is a delight. Bring Chinese food back to your life with this delicious gluten free recipe! High Protein Gluten Free Crepes – Blintz – Cheese Rolls (Flourless)
I needed to create a cheese rolls recipe, often known as blintz, using tapioca flour starch for an eHow video and thought I would include dairy-free options. Though you may use cow’s milk for a creamier crepe, dairy-free milk or even water will work. I filled my crepe with chopped sauteed Swiss chard with garlic, a mixture of sauteed onion and red bell pepper, topped with a little Gluten Free Bechamel Sauce. Though these are high in egg, they do not taste eggy. Fill with anything sweet or savory. A crepe filled with cottage cheese is known in the Jewish community as a blintz. Others fill them with cheese and roll them up like a burrito around all sides and bake until warm. Usually, they are then topped with a fruit sauce. Gluten free crepes are like an empty canvas. Create away! Continue reading “High Protein Gluten Free Crepes – Blintz – Cheese Rolls (Flourless)”
