Gluten Free Pumpkin Bread

This is my first attempt at creating a gluten free pumpkin bread. I used my gluten-free flour blend that I have used successfully on 3 other cakes now, however, the top center never would cook thoroughly, but was just as yummy. I was really afraid the rest would dry out if I cooked it much longer, but you’re welcome to give it a try. I couldn’t wait until it cooled completely before I cut into it, which is no-no, but well worth it. This gluten free pumpkin bread is just as moist as my gluten free banana bread, and the best pumpkin bread recipe I’ve ever had gluten free, or not! Enjoy and let me know how yours turns out. Rice with Basil and Candied Ginger Recipe

I searched for a candied ginger recipe online, but found mostly recipes on how to make candied ginger. So, I created my own! We really enjoyed this. I served it with gluten free chicken sausages made by Full Circle. They contain no MSG or nitrates which is very hard to find in a sausage. They have many other advantages, as well. I’ll see if I can get them to sponsor a giveaway. Meanwhile this rice and candied ginger recipe was wonderful. It’s not hot on the tongue, just a kick in the back of your throat. Gluten Free Pop Tarts – Style Pastries

Last month one of my Facebook friends asked me for a gluten free pop tarts recipe. I created this one for her. I filled one with chocolate ganache that I already had on hand, and the chocolate held up very well, even when fresh out of the oven. It did not ooze out of the pastry once cut. The others I filled with orange marmalade (the best!). Another I made sweet and savory by using a hot and spicy raspberry filling straight from a jar. The last I filled with a sweet walnut paste that I use in my walnut butter cups. Loved them all!

Gooey Gluten Free Brownies Recipe

Tropical Traditions sent me a jar of their gluten-free organic brown rice syrup to try. My first thought was either to use it in an ice cream or in a baked dessert. Brownies, I thought! Oh, I couldn’t get them out of my mind! I already have a couple of gluten-free brownie recipes, however, I really was looking forward to making a healthier one, and one that was super gooey! I performed a search online for brown rice syrup recipes and stumbled upon just what I had in mind, a brownie recipe made with brown rice syrup! I converted it to gluten-free brownie recipe and 1 1/2 times’ed the recipe, as it originally made such small brownies. So, here it is – my newest gluten-free brownie recipe. It’s ooey, gooey, sticky and tastes almost like a chocolate caramel. I added a bit of flaxseed meal to make it a little more healthier, but using organic brown rice syrup was such a great start. Brown rice syrup may look like agave, but is barely sweet, and especially when this recipe is made with bittersweet chocolate. Definitely a decadent delight. Enjoy! Gluten Free Finger Sandwiches – Cucumber Roasted Red Pepper Hummus

This wonderful gluten free finger sandwich recipe idea was contributed from Allison Windfahl, author of The Gluten Free Fat Loss Plan. Roasted red pepper hummus is one of my favorite dips! To have another red pepper hummus recipe idea is just grand! Allison did not include a recipe for the actual hummus, however one can easily be found on the Internet. Just make sure you use a tahini sauce that is pure sesame paste, without any gluten ingredients, if you using that in your recipe. Gluten Free Grilled Halibut with Strawberry Cilantro Salsa

Halibut is wonderful for those with celiac disease, as it is an excellent source of Vitamin B-12 (in which many are deficient), as well as protein and niacin. Gluten Free Gnocchi

This gluten free gnocchi recipe is so easy! While visiting with one of my Dad’s Italian neighbors, I mentioned that I was on a gluten free diet. The woman told me that one of her close friends was also. She makes her some gluten free gnocchi once in awhile. I was going to the grocery store and asked the neighbor if there was anything she needed. She said that she wanted some rice flour to make some gluten free gnocchi. She called me to come over so that I can see how she makes it and shared her recipe with me. She froze some and sent me home with some. It freezes very well. She mentioned that gluten free gnocchi is more delicate than the gluten variety so when I tossed it with some pesto sauce I used a rubber spatula to prevent any breakage, though it really wasn’t a problem. My father is ill, and all of us daughters are taking very good care of him. I went shopping for him and came back with cauliflower, which he wasn’t too happy about. However, he said he would eat cauliflower soup. That was a perfect idea on a chilly San Francisco day.
