To have another red pepper hummus recipe idea is just grand! Allison did not include a recipe for the actual hummus, however one can easily be found on the Internet. Just make sure you use a tahini sauce that is pure sesame paste, without any gluten ingredients, if you using that in your recipe. Having an afternoon gluten free tea? Make these wonderful red pepper hummus gluten finger finger sandwiches!
Ingredients:
- 6 slices whole grain gluten free bread
- 1 medium cucumber, cut into ¼” slices
- 3/4 C roasted red pepper hummus
Instructions:
- Lay out 3 of the bread slices on a platter or dish. Spread ¼ C hummus on each slice, then top with 4-5 slices of cucumber. Use the 3 remaining bread slices to complete each of the sandwiches. Cut each sandwich cross-wise once, then turn and cut each triangle cross-wise again so that you end up with 4 triangle sandwiches from each complete sandwich. This will make 12 small triangle sandwiches total.
