I hadn’t made chili with tomatoes for my husband in over a decade. Last weekend I was cleaning out our freezer and found a little tomato paste. So, I decided to use it in some chili for him. Gluten Free Tartiflette – Better Than Au Gratin Potatoes
Tartiflette is a French recipe made of potatoes, bacon and cream similar to au gratin potatoes, which originally did not contain cheese. Tartiflette contains lardon (cubed pork fat), but in the states, it may be easiest to use bacon. That’s why I use. Meanwhile, it is not a dish we can afford to consume on a regular basis, health-wise, but for special occasions or a treat, it is perfect, and so worth the effort. Mom’s Almost Famous Gluten Free Rice Pilaf
My mother used to make this recipe using Campbell’s Beef Consomme Soup. Well, the days of that much sodium are over for us. Plus, it’s not gluten free. I tried several times to duplicate the recipe without beef consomme (too lazy to make my own). I finally created a gluten free rice pilaf recipe with tons of flavor!
Update – I use Better Than Bouillon “reduced sodium organic” beef base/paste with water. I use more paste than suggested to make the broth so that it provides additional flavor. I use the reduced-sodium organic version. However, it may include cross-contamination nowadays. Always read labels carefully as manufacturers are constantly changing ingredients and sources for same.

Basic Basmati Rice Recipe
I was about to make some basmati rice (Indian white rice), but was wondering if soaking rice was healthier. I already soak beans and nuts to remove enzyme blockers. In my research, I discovered soaking basmati rice, as well as others, not only removes some nutrient blockers, it makes it easier to digest. In addition, the soaking speeds up the cooking process. You’ll appreciate the rinsing process because it removes so much of the starch that it makes this a fluffy, not sticky, basmati rice recipe. I use it with my Chicken Korma Recipe. Enjoy! Arrabbiata is a spicy Italian sauce usually served with penne pasta. Its strong garlic and tomato base with the potent heat may make you look angry. That is exactly what arrabbiata means, “angry”. Gluten Free Stuffed Zucchini Boats
hile you can serve single stuffed zucchini boats as an appetizer, you can also serve them as a main dish. However, my favorite way to utilize stuffed zucchini boats is to serve them along with some pasta and marinara sauce. Spinach Ricotta Gluten Free Dumplings
There are a number of ways of making gluten free dumplings. There’s my Chicken and Potato Dumplings, Asian Dumplings (better known as potstickers), and now this Italian version, better known as gnocchi.
