For pie crusts, I usually use my Gluten Free Phyllo Dough Recipe, as I created it long ago when I was satisfied with this heavier texture as a substitute for phyllo dough. Gluten Free Fruit Sandwiches

No gluten free bread on hand? Not a problem! By slicing apples or firm pears you have a healthy substitute. Of course, fruit sandwiches may not go with your favorite gluten free cold cuts, but an almond butter, peanut butter, or whatever your favorite butter may be, is the perfect compliment to fresh fruit, and provides your protein. However, sliced chicken or turkey on apples may work well. In addition, nut butter also provides adhesion so that your add-ons stick together, without falling out. Whatever you choose, you cannot go wrong with fresh fruit. It’s delicious and nutritious! Gluten Free Bars – Apple Walnut (Sugar-Free)

I decided to create my own gluten free snack bars with healthier choices of gluten free flours, and free of many allergens. Though the bar is heavy due its content, you can definitely make them more cake-like with lighter weight flours such as rice, sorghum, millet, etc. Just adjust the baking time as needed. Gluten Free Oyster Crackers

It’s been months since I received a request for a recipe for gluten free oyster crackers. I finally had the courage to give it a try. With very few gluten recipes to go by, I am very happy with the results. I have provided dairy-free and vegan options, though the results will vary depending upon the ingredients you use. Mainly the browning amount will change. Though if you were to use whole milk, it would make them a tad bit softer, yet more flavorful. I have provided the ingredients I used, and in parenthesis the alternatives. Get that clam chowder ready for this fall and enjoy it with these gluten free oyster crackers! Gluten Free Dairy Free Almond Avocado Pesto

This is one of those gluten free recipes that truly tastes spectacular. I have stopped using pine nuts in my pesto awhile ago. Almonds provide much more flavor. I have been searching for a way of creating a creamy dairy-free pesto and I finally figured how to achieve it, with avocado! I’m an avocado lover and am always on the lookout on how to use them in new ways. My husband, however, is not a fan of avocados, so I just split the recipe in half and make one with avocado and other half with 1/4 cup Parmesan cheese, as in my Gluten Free Almond Pesto recipe. Because pesto is raw, you can use it on vegetable pasta for a gluten free raw dish, as well. Avocado pesto – I’m hooked, and I bet you will be, too. Sugar-Free Gluten Free Chocolate Parfait

I’ve had several requests for gluten free, Jello instant pudding recipes as well as sugar-free ones. I do not advocate the use of sugar-free jello instant pudding, as it contains aspartame, which is a known cancer causing sweetener. To make this parfait with Chocolate Sugar-Free Fat-Free Jello Instant Pudding it will contain 8 grams of carbs per 1/2 cup. My suggestion is to make my No-Cook Gluten-Free Dairy-Free Sugar-Free Chocolate Mousse, which is pudding-like, and it uses avocado, a healthy fat, and is sweetened with dates. It also does not contain any chemicals or artificial dyes like the package pudding. Nor does it taste bitter. If you’d like to make the no-cook pudding with lower glycemic levels try substituting the dates with a little agave nectar/syrup. I know, it may sound like an odd combo, but avocado is actually a great egg or fat substitute. Though these mashed potatoes do taste a bit like avocado, with a little added cheese, (I used parmesan) they are simply amazing. I actually even enjoyed them cold. Cold, they taste more like avocado. Warmed they taste more like mashed potatoes. It’s all very interesting. It’s a must try if you like avocados. You’ll never know if you like avocado mashed potatoes unless you try them. My father is visiting again, and he just loves his soups! Split pea soup is one of his faves, but  knowing he is ill I just had to add some fresh nutritional content. So, I not only made a split pea soup, but with added fresh sugar snap peas. Being Italian he loves the flavor of basil, so I added a bit of that as well. Along with added onion, garlic and broth he had a huge bowl filled with tons of broken up Schar’s gluten free bread sticks! Fresh, vegan, vegetarian and delicious. Enjoy! Gluten Free Red Lentil Soup

This is not only gluten free, but also a vegetarian and vegan red lentil soup recipe. I used to flavor soup with meat, but have found that spices and fresh vegetables can provide just as much flavor when added in just the correct amounts and used to compliment the existing ingredients. I normally would have added chicken, or even bacon, but the addition of smoked paprika made a wonderful substitution! Light, despite the legumes, and very flavorful!
