Baking gluten free isn’t always easy, but if you’re also on a grain free diet, choices are more limited. This gluten free applesauce cake recipe is moist, can be made with or without starch (see tips for all almond meal without starch), and does not call for any gums, butter or oil. It is a one-layer cake, about 1″ high and about the weight of banana bread, though tossing in an additional egg will make it lighter. Some cakes may not necessarily need a springform pan, but because of this cake’s weight, I highly suggest using one, as to not break it when removing it from the pan. Gluten Free Oyster Crackers
It’s been months since I received a request for a recipe for gluten free oyster crackers. I finally had the courage to give it a try. With very few gluten recipes to go by, I am very happy with the results. I have provided dairy-free and vegan options, though the results will vary depending upon the ingredients you use. Mainly the browning amount will change. Though if you were to use whole milk, it would make them a tad bit softer, yet more flavorful. Gluten Free Funnel Cake
One of my Facebook friends asked me if I had a gluten free funnel cake recipe. I didn’t, but it intrigued me, as I had never made one, or tasted one before. Gluten Free Oat Bread (or Sorghum)
I had posted a link to the Gluten Free Prairie Oat Bread I had developed for Gluten Free Prairie awhile back on my social media channels. However, that gluten free oat bread recipe was developed specifically for Gluten Free Prairie Oats, as their product produces a higher rise and a lighter bread. So, I thought you’d all appreciate a similar oat bread recipe which included dairy that can be used with any gluten free oats. And here it is! Using dairy guarantees a higher rise and less, if not any, shrinkage. Gluten Free Rosemary Chicken
This rosemary chicken is another healthy, gluten free recipe contributed by Joy Bauer from her celiac disease recipe collection. Whether you grill it outdoors or use a grilling pan, this chicken recipe is almost like having breaded chicken. It has a wonderful crunch to it. Yet there are no bread or bread crumbs involved, making it low in carbs. And because you don’t use much oil, it’s low in calories, as well. Blueberry Sauce Using Powdered Sugar For Gluten Free Desserts
All blueberry sauce recipes may not be gluten free, but most are, provided you use a gluten free starch. Most blueberry sauce recipes call for starch, whether cornstarch, or possibly tapioca or potato starch in a gluten free blueberry sauce recipe. When using the recipe below, no starch is needed, as it is already included in the confectioner’s sugar (powdered sugar). Most powdered sugar you find in the supermarkets contain cornstarch. If you’re corn intolerant, or like to avoid GMO (genetically modified engineered) products, and you’re fortunate enough to live near a Trader Joe’s store, check out their Organic Powdered Sugar. Gluten Free Dairy Free Almond Avocado Pesto
This is one of those gluten free recipes that truly tastes spectacular. I have stopped using pine nuts in my pesto awhile ago. Almonds provide much more flavor. I have been searching for a way of creating a creamy dairy-free pesto and I finally figured how to achieve it, with avocado! I’m an avocado lover and am always on the lookout on how to use them in new ways. My husband, however, is not a fan of avocados, so I just split the recipe in half and make one with avocado and other half with 1/4 cup Parmesan cheese, as in my Gluten Free Almond Pesto recipe. Because pesto is raw, you can use it on vegetable pasta for a gluten free raw dish, as well. Avocado pesto – I’m hooked, and I bet you will be, too. Gluten Free Macaroni Salad Italian Style
I’ve been asked how to prevent gluten free macaroni salad from hardening so much in the refrigerator. I find it best to make the salad right before you’re going to serve it. And if your dressing is well chilled, it should make the salad cold enough. Though, serving it room temperature is fine. I made this salad a little sweet by using stevia, but you can add sugar instead, if desired. It was just perfect! I had never made a gluten free version, and I thoroughly enjoyed it. Sugar-Free Gluten Free Chocolate Parfait
I’ve had several requests for gluten free, Jello instant pudding recipes as well as sugar-free ones. I do not advocate the use of sugar-free jello instant pudding, as it contains aspartame, which is a known cancer causing sweetener. To make this parfait with Chocolate Sugar-Free Fat-Free Jello Instant Pudding it will contain 8 grams of carbs per 1/2 cup. My suggestion is to make my No-Cook Gluten-Free Dairy-Free Sugar-Free Chocolate Mousse, which is pudding-like, and it uses avocado, a healthy fat, and is sweetened with dates. It also does not contain any chemicals or artificial dyes like the package pudding. Nor does it taste bitter. If you’d like to make the no-cook pudding with lower glycemic levels try substituting the dates with a little agave nectar/syrup.
