Flaky Gluten Free Croissants

Image: Gluten Free Croissant

I put off developing a recipe for gluten free croissants for way too long. After multiple requests, here it is! I used my new gluten free phyllo dough recipe. Though it calls for superfine rice flour, I will be experimenting in the future with non superfine gluten free flours. I baked them after my husband went to bed one night and left 5 out, loosely covered. with a note stating to have as many as he’d like. I made them with tapioca flour/starch, which I am allergic to. (I had a couple anyways. Oh my!) When I woke up the next morning they were all gone. That night be kept raving them about them. I have never heard him enjoy anything, gluten free, more than these. And he still eats gluten! Meanwhile, I will continue to improve upon this recipe each time I make them. I hope you enjoy them as much we have. Continue reading “Flaky Gluten Free Croissants”

Gluten Free Chicken Mole (Mild)

Image: Gluten Free Chicken Mole

Mole is a flavorful Mexican sauce that contains just a tad bit of chocolate. (Chocolate is great in chili, as well.) It usually contains plenty of hot chiles, but this gluten free chicken mole does not. Because chicken tenderizes so quickly it is a fairly fast recipe. When all is said and done you have a rich sauce covering moist, tender pieces of chicken. Instead of serving this with gluten free tortillas, you may serve it with soft naan bread (Indian flatbread). I have provided links to all of my gluten-free tortilla and naan recipes in the Serving Suggestions section. This recipe was adapted from Authentic Mexican Mole Chicken and Chicken Mole. Enjoy! Gluten Free Pineapple Upside Down Cake

I’ve had a number of Facebook fans ask me for a gluten free pineapple upside down cake recipe over the years and I always plan to get right on it, but somehow do not. It’s my husband’s favorite, too! So, finally, yesterday when someone asked me for a recipe again, I developed a recipe immediately and baked it today. It turned out light and high with a perfect, moist texture. I was very pleased. So, without further ado, here is my new gluten free pineapple upside down cake. My husband requests this cake every year for his birthday and he doesn’t even need to eat gluten free. Quick Gluten Free Paella (Without Seafood or Chorizo)

Image: Gluten Free Paella

Any paella, including gluten free paella, usually contains chicken along with seafood and chorizo, however, I don’t care for seafood or the gristle in chorizo. I can only find the lower quality chorizo that contains gristle. Therefore, I skipped the seafood and substitute bacon bits for chorizo. To speed things up, I use instant rice in this paella recipe, but you can use regular, short grain rice. Just cook the paella with enough broth to substitute the amount water you would normally use to cook the rice. I didn’t have any saffron, so I skipped it as well. It turned out delicious! I even caught my husband taking a spoonful on his way to place his plate in the sink after our meal was complete. I told him that is one the highest forms of complements he could pay me. I hope you feel the same way. Enjoy! Continue reading “Quick Gluten Free Paella (Without Seafood or Chorizo)”

Peach Glaze or Peach Compote

In preparation for my new cake recipe that uses this peach glaze to substitute frosting, I thought I would share it with you now so that I can link to it in the recipe. It has all sorts of uses. You can add cinnamon to it and top ice cream, use it plain, or add hot spices such as cayenne, ginger, and chili powder. Baste your pork and chicken entrees using savory or hot spices. Meanwhile, stay tuned in for my delicious new gluten free cake recipe! Continue reading “Peach Glaze or Peach Compote”

Grilled Brisket with Marinated Beef (Gluten Free)

Image: Grilled Beef Brisket with Barbecue Sauce

The brisket cut of cattle is one of the prime cuts even though it contains quite a bit of muscle/connective tissue. When cooked properly, it can become very tender. Marinating is one way to tenderize such cuts, as well as slow cooking. Put them both together and you have one fine cut of meat. Adding your favorite dry rub is one way of creating flavor, but it does not help tenderize the meat, acid ingredients do. This recipe provides a marinade as well as instructions on how to slow cook a beef brisket on your grill or barbecue. This particular grilled brisket recipe is easy as it doesn’t need to be turned or basted once it’s on the grill. To learn where the brisket comes from on steer see the illustration below. Chocolate Chantilly – Rich Egg-Free Chocolate Mousse

Image: Chocolate Chantilly

The definitions of chantilly is 1. (of cream) flavored whipped cream, usually flavored with vanilla, but it can also be rum or liqueur; and 2. (of food) food prepared or served with whipped cream such as peach chantilly: peaches served with whipped cream which is usually flavored. Chocolate chantilly is a very strong flavored whipped chocolate which contains about 75% cocoa. Because the chocolate is so intense I decided to set some of it aside whip some heavy cream and powdered sugar into it. This enabled me to create a nice layer affect. It creates a beautiful presentation, and once you add whipped cream to the top, it all balances out nicely. With the hot weather we’ve been having, a nice cool dessert that doesn’t have to be baked or cooked long is just perfect. Enjoy! Continue reading “Chocolate Chantilly – Rich Egg-Free Chocolate Mousse”
