Contemplating my next blog post recipe, I first asked myself, what would my husband enjoy that I have never made. Gluten free dumplings was my answer! Don’t know what to do with over-ripened bananas? Make fried bananas! Fry them up in about 5 minutes and top them your favorite topping or the buttery sweet sauce straight from the pan. It’s truly an easy gluten free dessert recipe you cannot go wrong with. It’s a non-alcoholic version of bananas foster. Next time I make this recipe I’d like to try dredging the cut side of the bananas in almond flour before frying. That just sounds perfect to me. Wish I would have thought about it sooner. Enjoy! The consistency of this gluten free caramel sauce is much like the hot fudge for ice cream you can purchase in jars. However you may heat it and thin it out with additional milk, if desired. It calls for my gluten free dulce de leche recipe (thick, rich caramel sauce), but you can also purchase dolce de leche already made. Hershey’s makes one that is gluten free. Once you have your dolce de leche made or purchased, this chocolate caramel sauce may be made, literally, in one minute. Someone once said that the only thing they would trade chocolate for is dolce de leche. Well, I wish they could taste this. It’s heaven on a spoon! Coconut Whipped Cream – Dairy Free

This is a wonderful addition to your gluten free desserts! I found a few recipes online for coconut whipped cream, but I could tell that none of them would do the trick. One had it right, though, in using just the cream of a can of coconut milk. Yet it called for regular sugar, versus powdered. If you’re vegan, or prefer not use highly processed powdered sugar, you may consider using powdered evaporated cane sugar. As of last fall, I purchased some at Trader Joe’s. This cake is to die for, especially if you enjoy chocolate and sweetened whipped cream.  But you ask, “Pea flour recipes?” Yes. Peas are part of the legume family, and when ground into a flour may be used in larger quantities than other bean flours, as they are not as strong or bitter and the pea flavor is more easily hidden among other flours. Green pea flour is wonderful to bake with, as it is very high in protein, 4 grams of protein in every 1-1/2 tablespoons. No need to run out and purchase green pea flour. If you own a coffee grinder, just purchase a bag of green split peas at your local grocer and grind them up into a fine powder. If it appears to be gritty, don’t worry. Whipped cream is naturally gluten free, and once you’ve made homemade whipped cream you’ll never go back to can whipped cream again. If you prefer not to have that greasy texture, then this gluten free recipe is for you. Of course, you may use Cool Wwhip, as it is gluten free. However, you may wish to avoid corn syrup, as this is an ingredient in cool whip. I’ve been making homemade whipped cream for quite awhile, now. It is something I have always preferred. Gluten Free Chocolate Ganache & Dark or White with Dairy-Free Options

On a gluten free diet or any diet for that matter, there’s nothing more decadent than gluten free ganache! Fortunately, it is naturally gluten-free, as long as you use gluten free chocolate. It is made from chocolate, whipping cream, and vanilla. You may use ganache on any of your gluten free dessert recipes, or prior to cooling, while it is still thin, (or you may thin it out with additional whipping cream use it as a sauce for plating purposes. It makes a heavenly glaze for cakes, brownies, ice cream, donuts, and more, or allow it to harden some and use it as a frosting.
