Clinical Trials Begin for Celiac Vaccine Nexvax2

In May 2011 I reported on the Nexvax2, the Celiac Vaccine Slated for 2017, and voiced my skepticism. I wanted to provide an update. Per a recent press release, Trials Begin for Nexvax2 in New Zealand, Australia & US for Celiac Disease. One study will be performed in Australia and New Zealand on those who have the DQ2 genotype (genetic profile) for celiac disease, which majority have. Grain Free Gluten Free Applesauce Cake

Gluten-Free Grain-Free Applesauce Cake

Baking gluten free isn’t always easy, but if you’re also on a grain free diet, choices are more limited. This gluten free applesauce cake recipe is moist, can be made with or without starch (see tips for all almond meal without starch), and does not call for any gums, butter or oil. It is a one-layer cake, about 1″ high and about the weight of banana bread, though tossing in an additional egg will make it lighter. Some cakes may not necessarily need a springform pan, but because of this cake’s weight, I highly suggest using one, as to not break it when removing it from the pan. Gluten Free Xanthan Gum Substitutes

In years past, you’d mainly find xanthan gum and guar gum on most gluten free product labels. Nowadays you’ll find newer ingredients such as arabic gum, formally known as gum arabic. Arabic gum is a natural gum made from the hardened sap of acacia trees found in Africa and Australia; Acacia senegal trees, found in Africa, Pakistan and India; and Acacia seyal trees, where the gum is used to treat or prevent several ailments, including digestive issues and high cholesterol. I was in a hurry and defrosted some steak, thinking it would be the fasted thing to make. Then I decided that plain steak, whether barbecued, grilled or fried, just didn’t appeal to me. I haven’t had a salisbury steak in decades, and have never made one myself. So I decided to make a gluten free salisbury steak recipe for this blog, as it is a classic American dish. When my husband tasted it he said it was delicious, and added, “Did you notice that I said ‘delicious’? I usually say something’s good. Gluten Free Oyster Crackers

It’s been months since I received a request for a recipe for gluten free oyster crackers. I finally had the courage to give it a try. With very few gluten recipes to go by, I am very happy with the results. I have provided dairy-free and vegan options, though the results will vary depending upon the ingredients you use. Mainly the browning amount will change. Though if you were to use whole milk, it would make them a tad bit softer, yet more flavorful. One of my Facebook friends asked me if I had a gluten free funnel cake recipe. I didn’t, but it intrigued me, as I had never made one, or tasted one before. I had posted a link to the Gluten Free Prairie Oat Bread I had developed for Gluten Free Prairie awhile back on my social media channels. However, that gluten free oat bread recipe was developed specifically for Gluten Free Prairie Oats, as their product produces a higher rise and a lighter bread. So, I thought you’d all appreciate a similar oat bread recipe which included dairy that can be used with any gluten free oats. And here it is! Using dairy guarantees a higher rise and less, if not any, shrinkage. Gluten Free Baked Beans

My husband signed me up to bring baked beans to the family reunion. Therefore, I made gluten free baked beans. I’m allergic to tomatoes and haven’t had Van de Camp beans in ages, as it has tomatoes. However, Bush’s baked beans are tomato-free. Yes! I haven’t made these in decades! My husband’s idea was for bacon to be added. And since I’m a worry-wort as far as never making enough, I went for it, as it added volume to the recipe. And I’m really happy that I did, as it was a perfect addition, as far as flavor goes. And you skip the bacon if you’re watching your weight or cholesterol levels. The onion, garlic and bell pepper provides enough flavor. I hope you appreciate this recipe. My husband was delighted!
