High Protein Gluten Free Crepes – Blintz – Cheese Rolls (Flourless)

Image: Gluten Free Crepes

I needed to create a cheese rolls recipe, often known as blintz, using tapioca flour starch for an eHow video and thought I would include dairy-free options. Though you may use cow’s milk for a creamier crepe, dairy-free milk or even water will work. I filled my crepe with chopped sauteed Swiss chard with garlic, a mixture of sauteed onion and red bell pepper, topped with a little Gluten Free Bechamel Sauce. Though these are high in egg, they do not taste eggy. Fill with anything sweet or savory. A crepe filled with cottage cheese is known in the Jewish community as a blintz. Others fill them with cheese and roll them up like a burrito around all sides and bake until warm. Usually, they are then topped with a fruit sauce. Gluten free crepes are like an empty canvas. Create away! Continue reading “High Protein Gluten Free Crepes – Blintz – Cheese Rolls (Flourless)”

Gluten Free Bechamel Sauce Recipe (Basic Gluten Free White Sauce)

Bechamel Sauce Without All-Purpose Flour

One can use this gluten free bachamel sauce (pronounced “bay shoe mel) as a base for any cream sauce. You may add spices, or pureed roasted red peppers, cheese, and more. Often times, when using potato starch to thicken sauces it tends to thin when reheated. I used tapioca starch in my old recipe, and now a new thickener that stays thick. What will you use to flavor this sauce? Be creative! Make a chili bechamel and stuff some crepes with ground beef and sauteed onion and peppers. This sauce really is a blank canvas. Gluten Free Vol-au-Vent for Sweet or Savory Recipes

Image: Gluten Free Vol au Vent

A vol-au-vent is a French pastry which is made from layers of puffed pasty, hallowed out and filled with anything from sweet to savory. This gluten free vol-au-vent is stuffed with peach pie filling, however, you may fill it with something savory which contains a little sauce or moisture, such as a seafood mousse, chicken pot pie filling, etc. How this recipe came about was when I stumbled upon a recipe for vol-au-vent, and just had to make a gluten free version. While this recipe turns out a crust similar to pie crust, it can be made with my new flaky gluten free phyllo dough. This gluten free vol-au-vent recipe allows you to be creative. You can shape them into hearts for Valentine’s Day or four leaf clovers for St. Patrick’s Day. You can scallop the edges or whatever you desire. Give it a try. And I bet your guests will never know they are made from a gluten free recipe! Continue reading “Gluten Free Vol-au-Vent for Sweet or Savory Recipes”

We’ve all probably heard ‘everything in moderation’ as a good rule of thumb to follow. Whether we are talking about diet or exercise it seems to ring true, for the most part. But all rules have exceptions and this one is no different.

If you have celiac disease or gluten sensitivity moderate consumption of gluten is a death sentence. Is that an exaggeration? No, it isn’t. Gluten is known to increase the incidence of dying from all causes when it is untreated and the treatment is the total and complete elimination of gluten. Continue reading “Have a Gluten Intolerance? Gluten Free Truffles

Image: Gluten Free Truffles

I was so pleased with these gluten free truffles, as this was my first time coating them in tempered chocolate. Tempering the chocolate, discussed below, will give your truffles a professional shine. Tempering chocolate seems much faster than it appears in the directions below. It really is a chore. Unless these are a gift, I would skip that step and just melt the chocolate and not let it cool too much before dipping. Truffles are very easy and fast to make unless you are dipping them in chocolate. But it was so well worth it, as these were a gift. You may decorate the tops with white chocolate mixed with food coloring (Select Tea makes natural ones), or you may drizzle a bit of thin chocolate on the top after it sets a bit, or leave plain, as I did. I thought the papers that I used were decoration enough. If they are for Valentine’s Day you may think about piping out a very think pink or red heart. How will you decorate your gluten free truffles? Continue reading “Gluten Free Truffles”

Gluten Free Bagels

Homemade Gluten Free Bagel

This gluten free bagels recipe turned out very light – delish! – closer to a bread, but may be made heavier by using 1 less egg white. I created a Whole Grain Gluten Free Bagels recipe a few months ago, but needed to perfect a bagel recipe for an upcoming video I am doing for eHow.com. (They’ve invited me to be gluten free recipe talent for them!) I decided to use flour and starches that were readily available to all and that were inexpensive. Future versions may contain different flours. Though not perfected yet, in the sense of smoothness on the outside, they turned out light, which was what I was going for. Newer bagel recipes contain holes, which you never used to see before. I think I’ll try rolling out the dough next time which should create a smoother finish. Meanwhile, enjoy these gluten free bagels. I enjoyed mine toasted. Yum! Continue reading “Gluten Free Bagels”
