This cake is to die for, especially if you enjoy chocolate and sweetened whipped cream.  But you ask, “Pea flour recipes?” Yes. Peas are part of the legume family, and when ground into a flour may be used in larger quantities than other bean flours, as they are not as strong or bitter and the pea flavor is more easily hidden among other flours. Green pea flour is wonderful to bake with, as it is very high in protein, 4 grams of protein in every 1-1/2 tablespoons. No need to run out and purchase green pea flour. If you own a coffee grinder, just purchase a bag of green split peas at your local grocer and grind them up into a fine powder. If it appears to be gritty, don’t worry. Flourless Walnut Cake

This gluten free cake recipe turns out a very delicate, lightweight, yet moist, gluten free cake. One layer may be used as a coffee cake, without the heavy weight, or layer it, if you desire. It contains no oil, as the walnuts and egg supply sufficient amounts of fat. Garnish with honey or agave and top with walnuts or make 2 layers and frost with a cream cheese or white frosting. Gluten Free Cornbread – Cranberry Polenta Bread

Polenta is coarser than cornmeal and compliments this gluten free cornbread (actually gluten free polenta bread) recipe well, as it calls for superfine rice flours. It is just like a cornbread, but a coarser grain. I used Golden Pheasant brand, found at my local grocery store. You can definitely use cornmeal, if that is what you like, or is easier to obtain. This recipe was created upon my husband’s request for a coarser, crumbly, gluten free cornbread. It is moist, yet has more texture and crumb. First off, this gluten free apple coffee cake is heavenly, with or without the glaze! I recently created a gluten free coffee cake where you can add a jam, pie filling or cinnamon swirl. However, when I made the gluten free apple coffee cake this morning, I noticed it needed a bit more time to bake, as the pie filling is more moist than a thin layer of jam. Gluten Free Fruit Cake – Fruitcake

I have had a few requests for a gluten free fruit cake recipe. I created a lighter fruit cake and lessened the typical amount of sugar, glazed fruit and baking temperature, because I am not a fan of fruit cake, at all, even gluten free fruit cake. The adjustments were perfect, as is this gluten free fruit cake recipe, now, at least for me. Gluten Free Fluffy White Frosting

Because so many of the cake recipes that call for frosting on this site call for cream cheese, I thought a nice fluffy white icing recipe was in order for those who are not only gluten free, but dairy free. This fluffy white frosting recipe is great because of the color. It is actually white (even with the use of regular vanilla), instead of off-white from so much butter/margarine. If you wish the same white color, but wish to use additional vanilla for flavor, it is suggested to use clear vanilla. There are a few brands that advertise they are gluten free. Gluten Free Cornbread for Stuffing or Dessert

Moist Gluten Free Cornbread

Last year I had a request for a good gluten free cornbread stuffing recipe, but I hadn’t created a gluten free cornbread recipe, and never got around to it. So, this year, it is my top priority. Once you have a good gluten free cornbread recipe you can make any stuffing recipe you choose using that gluten free cornbread. Preferably it should be a soft, absorbable one. This recipe is more of a cake-style cornbread recipe, however, you can adjust it to create a more traditional gluten free cornbread for stuffing.

I love the dessert version. I think my hubby’s favorite foods are stuffing and cornbread, and he was in heaven with this gluten free corn bread recipe this morning, and he’s not 100% gluten free! Gluten Free Chocolate Cake Recipe with Caramel Sauce and Nuts

I get a lot of requests for a gluten free chocolate cake recipe. And I had run across a recipe for caramel sauce which made me think of a cake recipe my sister used to make. It had a caramel-like sauce and walnuts placed beneath a chocolate cake batter in a bundt pan. Often some of the caramel and nuts would stick to the pan, but it was so so good! I wanted to convert this to a gluten free chocolate cake recipe, but she has lost the recipe. I’m sure she’ll find it one day but stored it away once the caramel sauce wasn’t turning out right.
