Gluten Free Bread Recipe: Quinoa and Flaxseed

Both quinoa and flax seed are very healthy, making this gluten free bread recipe a win-win because it is also delicious. This bread’s texture is pliable which is often hard to find in gluten free bread. Besides being one of the highest protein foods, quinoa contains twice the fiber as most grains. Flax seed not only contains fiber, but omega-3 fatty acids and the same ingredient as aloe vera. Quinoa is sometimes an acquired taste, but you can always substitute some of the quinoa flour for oat, sorghum or millet flour. Then you can increase the amount of quinoa flour once your taste buds become accustomed to it. As stated above, this bread has a great texture and is a wonderful choice to improve your health. Gluten Free Cinnamon Raisin Bread

Gluten Free Cinnamon Raisin Bread

My husband requested that I make him a gluten free cinnamon raisin bread. Having already created a cranberry cinnamon raisin oat bread, I thought I would use a different flour this time. In an attempt to make a more economical bread, I used the typical starches and white and brown rice flours. I really like this bread knowing it is sweetened only with molasses, and includes a little flax seed meal, as well. This bread is soft, much like a gluten-free sandwich bread, however, if you wish a lighter gluten-free cinnamon raisin bread, I would suggest using more tapioca flour than potato flour. This is what I am going to experiement with next. Enjoy! Continue reading “Gluten Free Cinnamon Raisin Bread”

Gluten Free White Sandwich Bread Recipe – an experiment w/superfine rice flour

Having had a few requests for a gluten free white sandwich bread recipe, I thought I’d create one, seeing that I had to bake bread anyway. My birthday’s coming up and why shouldn’t I give myself a little treat, right? It turned out incredibly well, if I don’t say so myself. I can’t describe the soft texture well enough when it first came out of the oven. Just incredible! That’s the only word I can think of for this bread. Unfortunately, it becomes much too heavy and starchy as it cools. This is an article more on what not to do. Baked or Grilled Gluten Free Pizza Crust Recipe (in Cast Iron Skillet)

Image: Grilled Gluten Free Pizza

I keep hearing from some of my readers that it’s just too hot to bake, even a good gluten-free pizza! In researching how to grill a gluten-free pizza in a cast iron skillet, I came across Man Tested Recipes’ Pizza Dough for Cast Iron Skillet Pizza recipe. Though it is not a gluten-free grilled pizza recipe, it provided me with how much yeast to use, so I could skip the Expandex used in my previous gluten free pizza crust recipe. In addition, my last recipe was a bit too chewy for my taste. So, this time, I added a little more sorghum flour, used less tapioca starch and more potato starch, skipped the agar-agar, and tripled the yeast. It came out great in less than hour! I hope you enjoy! Continue reading “Baked or Grilled Gluten Free Pizza Crust Recipe (in Cast Iron Skillet)”

Commercial Yeast-Free Gluten Free Flatbread (Contains Yogurt)

While watching the Paula Deen Show, I saw her grilling some flatbread, made from a homemade dough. I just had to create a gluten free flatbread recipe and give it a go, myself! My Facebook survey resulted in majority people wanting a yeast-free gluten free recipe and preferred baked (soft), rather than grilled (crispy). So, that is exactly what I created! I was so excited how beautiful it looked, but it tasted just as good! The bread varies in height between 1″ to 1 1/2″. You can use this gluten free flatbread for sandwiches and it makes a great replacement for sourdough bread at the dinner table. You can dip it in olive oil and balsamic. I made sandwiches for dinner with chicken breasts, grilled onion and bell pepper (hubby had cheese, too) and created a balsamic dressing to coat the inside of the bread. I wanted to add avocado, but it would have been just too high for me. It was delish! – my new fave! Enjoy!

Gluten Free Hamburger Buns – Yeast Free!

Gluten-free Yeast-Free Hamburger Buns

I promised everyone, some time ago, gluten free yeast free recipes. Here is my new fave! Miniature gluten free hamburger buns, yeast free! I didn’t think they were going to be very good, as they are a little heavy, but oh my! – They are delicious! My husband and I had 3 as part of an early dinner today. Next time I am going to try just using egg white instead of the 2 eggs to make them lighter, but we are truly happy as they are. Continue reading “Gluten Free Hamburger Buns – Yeast Free!”

Dairy-Free Gluten Free Sandwich Bread Recipe: Oat Bread (or Sorghum)

Gluten-free Oat Flax Bread

I have been experimenting with this gluten free sandwich bread recipe that can be used for sandwiches and I have found that adding additional egg white turns out a much softer bread dough. It was heaven! – much like a homemade white bread texture, but not as starchy because I used mainly oat flour. I tried adding one additional large egg to my original gluten-free oat bread recipe and it turned out much better! Instead of adding 4 large egg whites, as mentioned in the recipe below, I added 2 large and 2 extra large. I have found that the more egg white you add, the larger and softer the bread. You do, however, have to be careful of adding too many, as you do not want the texture of cake. Watch the video of me making this Gluten Free Oat Bread.
