Now that it’s fall, it’s time for some comfort food, and with Dad terminally ill, I surely needed the comfort. Plus, the tri-tip roast was on sale and I couldn’t pass up the bargain. I like roast because it lasts for more than one meal in our house since it’s just the two of us. And this left my hubby plenty of food in the freezer to tied him over while I was gone. A couple of months ago I was reading about Bob’s Red Mill’s steel cut oats recipe contest. I wanted to enter, but never found the time to do so. So, this is the recipe that I would have created for that contest. I had to share it with you, as it makes a healthier creme brulee or a scrumptious breakfast for special occasions such as a brunch! Walnuts or pecans, added along with banana slices make wonderful toppings, too. Add the brown sugar, torch and voila – you have yourself heaven! Rice with Basil and Candied Ginger Recipe

I searched for a candied ginger recipe online, but found mostly recipes on how to make candied ginger. So, I created my own! We really enjoyed this. I served it with gluten free chicken sausages made by Full Circle. They contain no MSG or nitrates which is very hard to find in a sausage. They have many other advantages, as well. Stuffed and Breaded Mashed Potato Gluten Free Empanadas – Croquettes

These lovely gluten free empanadas are made from mashed potatoes, stuffed with sauteed onion, green pepper, garlic and cheese (or other filling), breaded, and then deep-fried. I cannot tell you how crunch these were!-just wonderful! And they only take 80-90 seconds to fry! You can fill them whatever you desire. Just be certain that if you use cheese to shred the cheese because chunk do not melt very quickly. Make them ahead of time and fry them up right before you serve your meal. Chocolate Sugar-Free Gluten-Free Donuts Doughnuts (Baked)

These are my favorite gluten free donuts, chocolate, chocolate and more chocolate! I had run across the cardboard wrapper that surrounded my donut pan and had been craving them, as I see it quite often. My husband’s favorite type of donuts are chocolate, and he’s coming home today from out of town. I thought what better way to greet him than have chocolate gluten free donuts awaiting him? Well, the first batch I forgot to add the milk, which caused them to be too dry. They already had been placed in the oven when I realized it. Gee, where was my mind that day? Udi’s Style Gluten Free White Bread Recipe

A couple of days ago I made my first attempt at making a copycat recipe for an Udi’s-style gluten free white bread recipe. It was a flop. Today I took another stab at it and created a decent gluten free white bread recipe! Yeah! It’s not perfected yet but still tasted wonderful, even after it cooled. I used many of the ingredients which Udi’s white bread contains, however, the rice flour is just a little grainy. You can’t notice it in a sandwich, but you can notice it a little when eating it plain. I’d really rather use sorghum flour instead of rice flours, but just had to give this a go. Meanwhile, the texture of this bread is wonderful! -similar to sourdough sliced bread. It has that Udi’s chew, yet soft. And this recipe makes a much larger loaf than Udi’s white sandwich bread. In addition, I keep hearing from some of my readers that they make instant mashed potatoes. Why not go the fresh route instead? You can make mashed potatoes for 4 in as little as 20 minutes, if you leave on the peel, otherwise about 30 minutes. The smaller you cut the pieces of potatoes, the faster they cook. Tropical Traditions sent me a jar of their gluten-free organic brown rice syrup to try. My first thought was either to use it in an ice cream or in a baked dessert. Brownies, I thought! Oh, I couldn’t get them out of my mind! I already have a couple of gluten-free brownie recipes, however, I really was looking forward to making a healthier one, and one that was super gooey! I performed a search online for brown rice syrup recipes and stumbled upon just what I had in mind, a brownie recipe made with brown rice syrup! I converted it to gluten-free brownie recipe and 1 1/2 times’ed the recipe, as it originally made such small brownies. So, here it is – my newest gluten-free brownie recipe. It’s ooey, gooey, sticky and tastes almost like a chocolate caramel. I added a bit of flaxseed meal to make it a little more healthier, but using organic brown rice syrup was such a great start. Brown rice syrup may look like agave, but is barely sweet, and especially when this recipe is made with bittersweet chocolate. Definitely a decadent delight. Enjoy! Gluten Free German Hot Potato Salad

This is my all time favorite potato salad recipe and potato side dish. My sister started making this about 30 years ago. She hasn’t been able to find the recipe, but did recall the ingredients. Instead of using all-purpose flour, as in a traditional German hot potato salad recipe, I used potato starch. I can’t remember the last time I made this and have lost the recipe, as well. What makes this recipe stand apart from other German Hot Potato Salad recipes is that the apple cider vinegar, combined with celery seed and a little bacon grease. Our entire family loves this recipe so much, we must have had it for about 20 straight years with our Christmas ham (with very few exceptions). It’s hard to believe Christmas is just 3 months away! I had to wing it on the quantities, but it tastes just like I remember – oh so good! Of course, I was always known for increasing the bacon and almost doubling the sauce. What are holidays for, right? This time I made it as the old recipe called for, as I just had 4 slices of bacon. Gluten Free Finger Sandwiches – Cucumber Roasted Red Pepper Hummus

This wonderful gluten free finger sandwich recipe idea was contributed from Allison Windfahl, author of The Gluten Free Fat Loss Plan. Roasted red pepper hummus is one of my favorite dips! To have another red pepper hummus recipe idea is just grand! Allison did not include a recipe for the actual hummus, however one can easily be found on the Internet.
