Gluten-Free Asian Chicken Noodle Lettuce Cups

If you’re looking for a light, quick, yet elegant meal, look no further! Shiratiki noodles contain very little carbs, therefore, this is great for a gluten-free low-carb diet, and those with diabetes. I needed a meal in 30 minutes or less, therefore, I did not marinate the chicken, but should I have had time, I definitely would have, though calories are saved by not doing so. I’ve added how to marinate the chicken at bottom of this page. You can add vegetables to this recipe such as green bell pepper or parboiled carrots, etc., and saute them along with the chicken. This is a gluten free recipe that I would serve anyone – gluten-free dieter or not! This is my favorite out of all of my shirataki noodle recipes. The other is used in a soup. Enjoy! No-Cook Gluten-Free Dairy-Free Sugar-Free Chocolate Mousse

Raw Chocolate Mousse

Imagine a no-cook sugar-free chocolate mousse that is also gluten-free, dairy-free, sugar-free, soy-free, corn-free, vegan and more! – that takes 5 minutes to whip up! Of course, you’ll need to soak one of the natural sweeteners, but that just takes about 4 hours. What is that sweetener? Dates! If you’re diabetic or low-carb, use a bit of stevia instead. Inspired by a few of my Facebook friends, I decided to create more gluten-free, sugar-free recipes. I’ve been meaning to grill some fruit but haven’t cleaned the grill yet. Unexpected guests? This is sure to please, as well as a great conversation topic! You can be sure I’ll be creating several versions of this recipe in the very near future. Perhaps with strawberries and bananas (not avocado and strawberries because that will turn to a brown color), other fruit and added nuts, like macadamia nuts or walnuts. Gluten Free Almond Poppy Seed Teacake

What is a teacake you ask? A teacake is a low cake, never frosted and is sturdy enough to pick up and eat with your hands. Traditionally, it is made in a loaf pan, but you may dress it up a bit by making it in a bundt pan. It is served with tea, but of course, you can eat this gluten free cake with your beverage of choice. You must like garbanzo bean flour to enjoy this recipe as is, or use Bob’s Red Mill Gluten Free Baking Flour. Bean flour has a unique taste, all its own, and is not for everyone. If you like The Grainless Baker Graham Crackers you’ll enjoy this one without any substitutions! You may also wish to consider using vanilla extract instead of almond and adding lots of spices (cinnamon, cloves, etc.) to hide the bean taste. This cake is very moist! Commercial Yeast-Free Gluten Free Flatbread (Contains Yogurt)

While watching the Paula Deen Show, I saw her grilling some flatbread, made from a homemade dough. I just had to create a gluten free flatbread recipe and give it a go, myself! My Facebook survey resulted in majority people wanting a yeast-free gluten free recipe and preferred baked (soft), rather than grilled (crispy). So, that is exactly what I created! I was so excited how beautiful it looked, but it tasted just as good! The bread varies in height between 1″ to 1 1/2″. You can use this gluten free flatbread for sandwiches and it makes a great replacement for sourdough bread at the dinner table. You can dip it in olive oil and balsamic. I made sandwiches for dinner with chicken breasts, grilled onion and bell pepper (hubby had cheese, too) and created a balsamic dressing to coat the inside of the bread. I wanted to add avocado, but it would have been just too high for me. It was delish! – my new fave! Enjoy!

Beef Stroganoff is gluten-free, naturally; however, you’ll need to prepare some gluten-free pasta, or eve rice. I remember the first time I cooked this dish. Sugar Free Dairy Free Gluten Free Doughnuts – Baked

I haven’t had a doughnut (donut) since I started my gluten-free diet. I didn’t really miss them, but enjoy the challenge of gluten-free baking. These gluten free doughnuts are baked, making them healthier than the standard recipes, as they are usually deep fried. In addition, some whole grain flours were used to provide additional health benefits, as well as agave and molasses. They taste much like the real thing! I think you’ll be very pleased. You can play around with this recipe substituting 1/4 cup of your favorite flour for one of the others. Add in your favorite baking seasonings or extracts, too. Experiment and have fun! I promised everyone, some time ago, gluten free yeast free recipes. Here is my new fave! Miniature gluten free hamburger buns, yeast free! I didn’t think they were going to be very good, as they are a little heavy, but oh my! – They are delicious! My husband and I had 3 as part of an early dinner today. Gluten Free Strawberry Sorbet

Strawberry Sorbet (Naturally Gluten Free)

It’s strawberry season again and I am delighted! Sorbet is gluten free, naturally, but not always egg-free. This strawberry sorbet recipe includes several choices of ingredients. Due to my citrus allergies I used cream of tartar in place of lemon juice, but if I could have use lemon juice, and suggest you do for a more flavorful sorbet. Pineapple juice or orange juice will also work well. As a thickening agent you can either use a food starch or egg white, whichever works best for your diet. If you are watching your sugar intake or prefer a refined sugar-free version you may use agave nectar/syrup in place of simple syrup (sugar and water heated). Adding a natural food coloring will make it look more appetizing, but it is not necessary. Select Tea makes natural ones. If you do use food coloring, you are not limited to red. It’s gilling season, and a good gluten free barbecue sauce (cross-contamination free) may be hard to come by, especially a barbecue sauce without tomatoes (allergies). However, I enjoy my Gluten Free Barbecue Sauce Without Tomatoes. This time, since I had some homemade plum sauce already made, I thought it would make a great gluten free barbecue sauce substitute, along with other ingredients and a good steak rub. It came out wonderful!  I’ll use it on broiled steaks, as well. I don’t know if I will ever make a plain steak again!

Gluten Free Salad Dressing for Asian/Chinese Chicken Salad

Little by little I am attempting to remove all soy from my diet. The one thing that I am still working on is converting some recipes to soy free. Therefore, for this Asian gluten free salad dressing recipe, often known as Chinese chicken salad, I chose to use balsamic vinegar instead of rice vinegar and soy sauce.
