Dairy-Free Gluten Free Sandwich Bread Recipe: Oat Bread (or Sorghum)

Gluten-free Oat Flax Bread

I have been experimenting with this gluten free sandwich bread recipe that can be used for sandwiches and I have found that adding additional egg white turns out a much softer bread dough. It was heaven! – much like a homemade white bread texture, but not as starchy because I used mainly oat flour. I tried adding one additional large egg to my original gluten-free oat bread recipe and it turned out much better! Instead of adding 4 large egg whites, as mentioned in the recipe below, I added 2 large and 2 extra large. I have found that the more egg white you add, the larger and softer the bread. You do, however, have to be careful of adding too many, as you do not want the texture of cake. Watch the video of me making this Gluten Free Oat Bread. Gluten Free Cheddar Cheese Potato Chips Recipe (or Plain)

Homemade Gluten Free Cheddar Potato Chips

One would think making your own gluten free cheddar cheese potato chips would be easy an easy endeavor, however, it took much research and finally experimenting on my own to create this recipe. I wanted a fried potato chip, but not too brown (burnt tasting), as I saw in many other recipes online. I had other concerns, as well. Did I soak them in cold water first? If so, did this make them more crisp or just prevent browning of the raw potato? Or would that cause the temperature of the oil to drop too much? I share my research below, but you can skip ahead to my successful recipe below for cheddar cheese potato chips. Gluten Free Cracker Recipe: Whole Grain

Plate of Whole Grain Gluten Free Crackers

This was my first attempt at creating a gluten free cracker recipe. I was really anchoring for a healthy gluten-free snack made from whole grains. They compliment a dip very well. Avocado and hummus are my faves! They have a bit of a nutty flavor due to the teff and millet flours, a great way to get fiber and whole grains. The thinner you roll them, the crispier the cracker. Perhaps you already have a favorite gluten free cracker recipe. And perhaps and this will inspire you to use a little whole grains in it next time. Enjoy!

Berry Cheesecake Gluten Free Pancakes

Gluten-free Berry Cheesecake Pancakes

In an attempt to use up some cream cheese I had in the refrigerator, I thought about creating a cream cheese gluten free pancakes recipe. At first, I thought of just spreading the cream cheese between the pancakes. Then I thought, what about if I could taste gooey chunks of cream cheese in the middle? – and then top them with strawberries, blueberries or blackberries? That would make a cheesecake pancake! I ended up adding some to the batter creamed, and the rest in chunks. Oh my! – very filling and much like a dessert without all the refined sugar!

You can be very creative with this recipe. Add blueberries to the batter, etc. Continue reading “Berry Cheesecake Gluten Free Pancakes”

Gluten Free Curried Grilled Halibut

Dr. Claudia Pillow provides us with this healthy recipe for grilled halibut which calls for curry, and explains the health benefits of this little wonder spice.

Curry powder contains turmeric. In India, turmeric is promoted as an anti-inflammatory herbal remedy and is said to produce fewer side effects than commonly used pain relievers. Some practitioners prescribe turmeric to relieve inflammation caused by lupus, arthritis, muscle sprains, swelling, and pain caused by injuries or surgical incisions. It is also promoted as a treatment for rheumatism and as an antiseptic for cleaning wounds. In addition, turmeric contains the antioxidant curcumin, which has been found to hinder the growth of mutated cells associated with cancer of the breast, skin, and colon, as well as lymphoma. Curcumin can kill cancer cells in laboratory tests and also has been found to shrink animal cancer tumors (1). Continue reading “Gluten Free Curried Grilled Halibut”
