Gluten-Free Allergen-Free Devil’s Food Cake
While developing recipes for my cookbook, I created a traditional Copycat Betty Crocker Devil’s Food Cake Mix recipe. At the time, I wasn’t sure on the theme of my cookbook. I thought I’d give an egg-free version a try. My husband who loves devil’s food cake enjoyed it as did I. The one recipe tester who tried it did not use a mixer, which would have made it lighter. She just mixed it all up in a bowl. As you can see in her photo, it still looks delicious, but a little dense. She really enjoyed it, even though she is not on an egg-free diet. She rated it 10/10 in texture, 9/10 in flavor, and 10/10 in appearance. Her husband thought it was too moist. Meanwhile, I hope you enjoy it as much as we did.

Gluten Free Chicken Kebabs – Kabobs with Honey Marinade
One of my Facebook followers requested a recipe for a sweet and sticky chicken kebab / kabob marinade. Honey or sugar and some liquid can create stickiness, but honey or agave is the best. Gluten-free barbecue sauce would also work if that’s all you have on hand. However, honey or honey and mustard are awesome. It’s great due to my tomato allergies. In this recipe, I use lots of black pepper. Depending to whom I am serving it to, I may even add a little gluten free chipotle or hot sauce. Yum! Let me know how you like it. Easy Gluten Free White Bean and Chicken Chili
White kidney beans may be difficult to find in your local store, but you can use any white beans to make this flavorful chicken chili. I don’t know what it is about this recipe, but I am addicted to it! It has just the right amount of everything…garlic, sweetness, tang, broth, and heat. Gluten Free Holiday Green Beans
While green beans are gluten free, not all brands of bacon are. I’ve been making this bacon and onion green bean casserole during the holidays for decades. It’s my favorite dish that I just can’t live without. My family loves it because I don’t skimp on the bacon. There’s nothing worse than being one of the last ones to dig in and have to dig for bacon. Gluten Free Napa Cabbage Kimchi
Kimchi, also spelled kimchee and gimchi, is a fermented Korean side dish made of cabbage and other vegetables with a number of other ingredients. In traditional preparation, kimchi is fermented in jars underground. There are too many different varieties of kimchi to mention, but I enjoy the napa cabbage version. Napa cabbage is tender and sweet. This recipe is my own mildly spicy version. It reminds me of spicy coleslaw that has rested overnight or a couple of days, you know, when it becomes soft instead of crisp. Kimchi may be eaten fermented or fresh, which is how I use it. Serve this napa cabbage kimchi with rice and Korean pulled pork or strain it and use as a filling with pulled pork in Gluten Free Egg Rolls. (Stay tuned in for my Korean Pulled Pork Recipe.) Prosciutto is a popular Italian delicatessen cut of meat used in many popular main dishes such as Chicken Cordon Bleu. Prosciutto is to ham as pancetta is to bacon*, similar, yet different.
