Gluten Free Taco Zucchini Boats (Turkey or Beef)
Having picked up a couple of 1-1/2 pound packages of ground organic turkey at Costco, I wanted to create a new flavorful recipe using one of them. So, I created these gluten free taco zucchini boats. I saved half of the filling to fill bell peppers. I used the other package to substitute the chopped chicken breast in my Asian Rice Cups recipe. They’re both delicious. Gluten Free Dairy Free Morning Glory Muffins (Coconut and Oat Versions)
With or without crumble topping, these gluten free morning glory muffins are hearty and moist as they hold plenty of fruit and nuts. The fruit is the main source of their moisture; however, sugar is also added. You may use organic sugar to make it healthier. I eat these muffins for dessert without the topping! They’re sort of like carrot cake, but a bit heartier. They’re wonderful! I hope you enjoy them as well.

Meat Lovers Gluten Free Cannelloni with Homemade Pasta
This gluten free cannelloni is filled with a variety of minced meat. If you’re a meat lover, it’s right up his alley. I use a pasta machine to roll out the pasta, but if you’re strong, you can do it by hand. The pasta is absolutely delicious and doesn’t get mushy.

Gluten Free 1234 Cake or Cupcakes
Once home bakers began using volume measurements, they began to make this easy-to-remember recipe for 1234 cakes. They are so called because they consist of 1 cup butter, 2 cups sugar, 3 cups flour, and 4 eggs. They usually are a bit heavy similar to pound cake, but they do not contain as much butter and eggs. Therefore, they are less expensive to make. I have adjusted the method of making this cake to make it lighter. Enjoy!
Gluten Free Pineapple Curd
Pineapple curd is my go-to filling when I want lemon curd, due to my citrus allergy. It’s delicious and compliments coconut extremely well as they are both tropical. Use this pineapple curd in cakes, cupcakes, pies, tarts, cookies, and more. As you can see in the photo, pineapple also makes a great topping for pancakes. Gluten Free Egg Rolls with Turkey, Chicken, Lamb, or Vegetable
As I announced in my newsletter yesterday, I was about to make my gluten free egg rolls recipe using leftover turkey. Well, one of my ingredients that I use for the outer crust wasn’t fresh.
