Yam or Sweet Potato Casserole (Naturally Gluten Free)

Sweet Potato Casserole - Gluten Free

I purchased a bag of organic yams over a week ago. Still not having used them, what better time to cook them than Thanksgiving.

I asked the produce man what is the difference between yams and sweet potatoes. He said that yams contained more moisture and sweet potatoes were stringy. That was a different answer than my previous research. However, he was incorrect. My yams were stringy. So, I used them as I would sweet potatoes and they turned out delicious! Gluten Free Thanksgiving Stuffing – Dressing with Schar Baguettes

Gluten Free Herb Stuffing

This is my new favorite gluten free stuffing recipe. OMG! Using Schar baguettes makes it as close to my old gluten recipe for stuffing that used sourdough bread. I love it! Using fresh herbs and creamy butter brings it over the top. See the tips section on how to prepare in advance. Enjoy!

Gluten Free Napa Cabbage Kimchi

Mild Gluten Free Kimchi

Kimchi, also spelled kimchee and gimchi, is a fermented Korean side dish made of cabbage and other vegetables with a number of other ingredients. In traditional preparation, kimchi is fermented in jars underground. There are too many different varieties of kimchi to mention, but I enjoy the napa cabbage version. Napa cabbage is tender and sweet. This recipe is my own mildly spicy version. It reminds me of spicy coleslaw that has rested overnight or a couple of days, you know, when it becomes soft instead of crisp. Kimchi may be eaten fermented or fresh, which is how I use it. Serve this napa cabbage kimchi with rice and Korean pulled pork or strain it and use as a filling with pulled pork in Gluten Free Egg Rolls. (Stay tuned in for my Korean Pulled Pork Recipe.) Gluten Free Chicken Cordon Bleu

Gluten Free Chicken Cordon Bleu and Mornay Sauce

I have only had chicken cordon bleu once in my life, a matter of fact, it was when I was still dating my husband, back in the 70s! Making gluten free chicken cordon bleu was a breeze. It’s not much more difficult than breading chicken. However, it’s delicious! My version uses an herb prosciutto mix. However, you can use slices of prosciutto instead, to make it easier, which is the traditional method. I enjoyed the extra herbs, though. Plus I had some leftover from my Pork on Pork recipe. Herb Prosciutto on Pork Chops “Pork on Pork”

Pork on Pork with Herbs

Prosciutto is a popular Italian delicatessen cut of meat used in many popular main dishes such as Chicken Cordon Bleu. Prosciutto is to ham as pancetta is to bacon*, similar, yet different. I use prosciutto in this “pork on pork” chop recipe that was inspired by a cookbook author, Amanda Freitag, who was recently promoting her cookbook, “Comforting Classics” on the Food Network channel. Gluten Free Beef Gyros

Gluten Free Beef Gyros on Gluten Free Naan

When Chobani sent me coupons for their amazing Greek yogurt, it inspired a few new recipes. To start the ball rolling, I made a Greek cucumber yogurt sauce and used it in these delicoius gluten free beef gyros. Instead of pita, I used my gluten free galric naan recipe (Indian flatbread). If you haven’t tried it yet, you must! You will find the links to all of these recipe in the below gyros recipe. Enjoy! Continue reading “Gluten Free Beef Gyros”

Soft Gluten Free Garlic Naan – Oven-Baked or Stovetop

Oven-Baked Gluten Free Naan

Naan is the Indian version of flatbread. There are two versions, crisp/firm and the one I prefer, soft. The soft is to-die-for and is the only version I make! Everyone who has tried my skillet version raves about it. If you have a pizza stone, that version is even better! That’s all I make during the fall and winter. To avoid my kitchen from over-heating, I use the stovetop version during the summer months. Continue reading “Soft Gluten Free Garlic Naan – Oven-Baked or Stovetop”
