Jerk spice is a very hot and spicy seasoning mixture popular in Jamaica. It can be made applied to meat wet or as a dry rub. This gluten free version of jerk chicken can be made with mild peppers. I used canned green chiles. If you’re a brave sole you can use hotter chiles such as habanero and jalepeno peppers*. They pack a deadly heat, but I’ve provided some pointers for you in the tips section. Habanero peppers are the hottest chiles easily found in the U.S. and are a bit tangy. Jalepeno contain a moderate heat in comparison to habanero peppers, but is still too hot for me. They are also a bit sweet, similar to bell peppers. No-Bake Gluten Free Cheesecake and Crust (Dairy-Free Options)

I know you’re busy. We all are. So, not only can you take a break from complicated recipes, but a no bake one, too. This no bake gluten free cheesecake uses Pamela’s Products cookies in the crust. Though I have listed their Extreme Chocolate Mini Cookies, you can use any flavor you desire. You can spice it up with ginger snaps, chocolate chip or, chocolate chocolate chip. Get creative!

Gluten Free Chicken Mole (Mild)

Mole is a flavorful Mexican sauce that contains just a tad bit of chocolate. (Chocolate is great in chili, as well.) It usually contains plenty of hot chiles, but this gluten free chicken mole does not. Because chicken tenderizes so quickly it is a fairly fast recipe. When all is said and done you have a rich sauce covering moist, tender pieces of chicken. Instead of serving this with gluten free tortillas, you may serve it with soft naan bread (Indian flatbread). Quick Gluten Free Paella (Without Seafood or Chorizo)

Any paella, including gluten free paella, usually contains chicken along with seafood and chorizo, however, I don’t care for seafood or the gristle in chorizo. I can only find the lower quality chorizo that contains gristle. Therefore, I skipped the seafood and substitute bacon bits for chorizo. To speed things up, I use instant rice in this paella recipe, but you can use regular, short grain rice. Just cook the paella with enough broth to substitute the amount water you would normally use to cook the rice. I didn’t have any saffron, so I skipped it as well. It turned out delicious! I even caught my husband taking a spoonful on his way to place his plate in the sink after our meal was complete. I told him that is one the highest forms of complements he could pay me. Peach Glaze or Peach Compote

In preparation for my new cake recipe that uses this peach glaze to substitute frosting, I thought I would share it with you now so that I can link to it in the recipe. It has all sorts of uses. You can add cinnamon to it and top ice cream, use it plain, or add hot spices such as cayenne, ginger, and chili powder. Baste your pork and chicken entrees using savory or hot spices. Grilled Brisket with Marinated Beef (Gluten Free)

The brisket cut of cattle is one of the prime cuts even though it contains quite a bit of muscle/connective tissue. When cooked properly, it can become very tender. Marinating is one way to tenderize such cuts, as well as slow cooking. Put them both together and you have one fine cut of meat. Adding your favorite dry rub is one way of creating flavor, but it does not help tenderize the meat, acid ingredients do. This recipe provides a marinade as well as instructions on how to slow cook a beef brisket on your grill or barbecue. This particular grilled brisket recipe is easy as it doesn’t need to be turned or basted once it’s on the grill. To learn where the brisket comes from on steer see the illustration below. Chocolate Chantilly – Rich Egg-Free Chocolate Mousse

The definitions of chantilly is 1. (of cream) flavored whipped cream, usually flavored with vanilla, but it can also be rum or liqueur; and 2. (of food) food prepared or served with whipped cream such as peach chantilly: peaches served with whipped cream which is usually flavored. Chocolate chantilly is a very strong flavored whipped chocolate which contains about 75% cocoa. Because the chocolate is so intense I decided to set some of it aside whip some heavy cream and powdered sugar into it. This enabled me to create a nice layer affect. It creates a beautiful presentation, and once you add whipped cream to the top, it all balances out nicely. With the hot weather we’ve been having, a nice cool dessert that doesn’t have to be baked or cooked long is just perfect. Enjoy! Homemade Sweet Potato Chips (Naturally Gluten Free)

With summertime approaching, and our already warm weather, I am picturing backyard barbecues and picnics on the horizon. What better way to celebrate than with a healthier snack. Rather than reaching for processed potato chips, or expensive natural ones, you can make your own right at home. The great thing about homemade sweet potato chips is that they are lower in carbohydrates compared to regular chips. When making them at home you can use a healthier oil, as well. Fast Single Serve Yeast-Free Gluten-Free Bread Recipe (Dairy-Free)

While this gluten free bread recipe is not the ideal way to make bread, it sure comes in handy in a pinch, especially if you’re in a hurry. It goes well with a moist filling such as chicken salad, or even bacon or sausage since it made with a large amount of egg. Made in the microwave just in one and half minutes, this is an easy recipe you can through together and be out the door in no time. This gluten free yeast free bread recipe is high in protein due to the egg and if you use whole grain flour, it should be twice as healthy.
