Today is Fat Tuesday, also know as Mardi Gras, though Mardi Gras festivities run from January through Fat Tuesday. It has an interesting history, which you can read here. Gluten Free Blueberry Coffee Cake

This gluten free blueberry coffee cake may be made three different ways. You can use canned blueberry pie filling and layer it as seen in the photo below and add an optional glaze. You can use fresh or frozen blueberries and fold them into the batter. Lastly, once you fold the blueberries into the batter you can top it with the streusel topping recipe I have supplied below. I chose the quickest method, pie filling, and it was delicious. Enjoy this blueberry coffee cake, no matter how you assemble it. I have included instructions on how to bake it in a 9-inch round pan, 9 x 9-inch square pan, or see the tips section for making a larger one in a 9 x 13-inch pan. I’ve had a number of Facebook fans ask me for a gluten free pineapple upside down cake recipe over the years and I always plan to get right on it, but somehow do not. It’s my husband’s favorite, too! So, finally, yesterday when someone asked me for a recipe again, I developed a recipe immediately and baked it today. It turned out light and high with a perfect, moist texture. I was very pleased. Flourless Walnut Cake

This gluten free cake recipe turns out a very delicate, lightweight, yet moist, gluten free cake. One layer may be used as a coffee cake, without the heavy weight, or layer it, if you desire. It contains no oil, as the walnuts and egg supply sufficient amounts of fat. Garnish with honey or agave and top with walnuts or make 2 layers and frost with a cream cheese or white frosting. Whether serving with coffee, tea, or a glass of milk, this gluten free cake will surely hit the spot if you have a sweet tooth, and it is all free of highly refined sugar (depending upon if you use honey or agave) and is high in protein. Gluten Free Apple Coffee Cake Similar to Pastries

First off, this gluten free apple coffee cake is heavenly, with or without the glaze! I recently created a gluten free coffee cake where you can add a jam, pie filling or cinnamon swirl. However, when I made the gluten free apple coffee cake this morning, I noticed it needed a bit more time to bake, as the pie filling is more moist than a thin layer of jam. Gluten Free Coffee Cake – Strawberry or Cinnamon Swirl

I was planning on improving my cinnamon roll recipe today, but it dawned on me that I could make one huge cinnamon roll by making a gluten free coffee cake. Then things took off from there and I used strawberry jam instead of a brown sugar and cinnamon filling. You can use either and I have included the recipe for the cinnamon filling. Gluten Free Cranberry Coffee Cake Recipe from Namaste Mix

Gluten Free Coffee Cake

I was sent a couple of items from Namaste Foods to sample. The one I recently tried was their Biscuits, Pie Crust and More! Flour Blend which also makes dumplings, shortcake and coffee cake. The package had several recipes including an orange cranberry coffee cake recipe. Unfortunately, I am allergic to citrus and had to substitute the orange juice for applesauce and added more cinnamon (yum!) – very moist! I have included my recipe along with the recommended ingredients and instructions (see “versus…”). I recommend this mix, as it is close to Bisquick and I bet will make some very good recipes besides this one. I can’t wait to try the pie crust! The coffee cake rose beautifully, even with all of that heavy applesauce! This recipe is gluten-free, casein free, (egg-free if you use an egg substitute), and (nut free, if you skip the walnuts on top).
