This is my first attempt at creating a gluten free pumpkin bread. I used my gluten-free flour blend that I have used successfully on 3 other cakes now, however, the top center never would cook thoroughly, but was just as yummy. I was really afraid the rest would dry out if I cooked it much longer, but you’re welcome to give it a try. I couldn’t wait until it cooled completely before I cut into it, which is no-no, but well worth it. This gluten free pumpkin bread is just as moist as my gluten free banana bread, and the best pumpkin bread recipe I’ve ever had gluten free, or not! Enjoy and let me know how yours turns out. Creme Brulee Steel Cut Oats Recipe
A couple of months ago I was reading about Bob’s Red Mill’s steel cut oats recipe contest. I wanted to enter, but never found the time to do so. So, this is the recipe that I would have created for that contest. I had to share it with you, as it makes a healthier creme brulee or a scrumptious breakfast for special occasions such as a brunch! Walnuts or pecans, added along with banana slices make wonderful toppings, too. Add the brown sugar, torch and voila – you have yourself heaven! Gluten Free Pop Tarts – Style Pastries
Last month one of my Facebook friends asked me for a gluten free pop tarts recipe. I created this one for her. I filled one with chocolate ganache that I already had on hand, and the chocolate held up very well, even when fresh out of the oven. It did not ooze out of the pastry once cut. The others I filled with orange marmalade (the best!). Another I made sweet and savory by using a hot and spicy raspberry filling straight from a jar. The last I filled with a sweet walnut paste that I use in my walnut butter cups. Loved them all!

Chocolate Sugar-Free Gluten-Free Donuts Doughnuts (Baked)
These are my favorite gluten free donuts, chocolate, chocolate and more chocolate! I had run across the cardboard wrapper that surrounded my donut pan and had been craving them, as I see it quite often. My husband’s favorite type of donuts are chocolate, and he’s coming home today from out of town. I thought what better way to greet him than have chocolate gluten free donuts awaiting him? Well, the first batch I forgot to add the milk, which caused them to be too dry. They already had been placed in the oven when I realized it. Gee, where was my mind that day? Nut-Free Dairy-Free Egg-Free Gluten Free Candy Corn
Halloween is almost upon us and there are many parents who are looking for a gluten-free candy corn made in a facility without gluten and nuts. Can’t find one? Make your own! This recipe is an adaption of the Best Allergy Sites’ Peanut Free Candy Corn – Egg Free Gluten-Free Candy Corn Recipe to also make it dairy-free. I substituted the butter and dry milk powder with other ingredients, and removed the vanilla. Candy corn doesn’t usually contain vanilla, and if you use a dark vanilla it will change the color of the candy. Hope you have some kids to help you make this fun gluten-free Halloween candy! Gooey Gluten Free Brownie Recipe
Tropical Traditions sent me a jar of their gluten-free organic brown rice syrup to try. My first thought was either to use it in an ice cream or in a baked dessert. Brownies, I thought! Oh, I couldn’t get them out of my mind! I already have a couple of gluten-free brownie recipes, however, I really was looking forward to making a healthier one, and one that was super gooey! I performed a search online for brown rice syrup recipes and stumbled upon just what I had in mind, a brownie recipe made with brown rice syrup! I converted it to gluten-free brownie recipe and 1 1/2 times’ed the recipe, as it originally made such small brownies. So, here it is – my newest gluten-free brownie recipe. It’s ooey, gooey, sticky and tastes almost like a chocolate caramel. I added a bit of flaxseed meal to make it a little more healthier, but using organic brown rice syrup was such a great start. Brown rice syrup may look like agave, but is barely sweet, and especially when this recipe is made with bittersweet chocolate. Definitely a decadent delight. Enjoy! Gluten Free Graham Crackers and Pie Crust
Looking for a great gluten free graham crackers recipe? Danna Korn and Connie Sarros, the authors of Gluten-Free Cooking For Dummies have already contributed a Gluten Free Honey Cinnamon Grahams recipe to this site, but I have had many requests for a more traditional gluten free graham crackers recipe using more traditional gluten free flours. And here it is! I’ve tried to address most of the dietary issues, however, these are not grain-free. I hope you enjoy these crunchy gluten free graham crackers as much as I did. Gluten Free Milano Cookies
I have been craving gluten free milano cookies, but of course, they don’t make any. I found a regular recipe for a knock-off milano cookie on Top Secret Recipes’s website. I knew that using regular (not superfine) rice flour would create a crunchy cookie, but I just cannot stand the gritty texture. I was able to convert it into gluten free milano cookies without the grittiness by using sorghum flour, potato starch and tapioca starch. Though sorghum doesn’t have a pleasant color, if the use of lemon extract provides more of a yellow color, just like milano cookies. And if you use clear vanilla it will even have a closer to milano cookie color. They came out great! Gluten Free Vanilla Pudding
You’re gluten free now, so you may be considering a healthier diet, meaning no more Jello pudding for you? Well, I believe you’ll appreciate this gluten free vanilla pudding recipe even more than the packaged brands. Plus, it is an easy recipe and can be served immediately, warm or refrigerated. The difference between this gluten free vanilla pudding recipe and my custard recipe is mainly that the creme brulee is made with whipping cream and this gluten free pudding is made with milk or milk substitute; is thickened with starch; and that the creme brulee is baked versus the pudding is boiled. If you’re dairy free, feel free to substitute the cow’s milk for your milk of choice. I will be using this as a filling for one of my upcoming recipes. So, stay tuned in! Gluten Free Zucchini Bread Recipe
Quite a bit of research went into creating this gluten-free zucchini bread recipe to get this recipe just right. Most gluten free quick bread recipes (breads using leavening agents to enable immediate baking, rather than allowing to rise), allow you to interchange the fruit vegetable or puree you use, except for zucchini bread recipes. Zucchini contains quite a bit of liquid. Therefore, you either need to lessen the other liquids in the recipe or squeeze out much of the liquid in the zucchini. Instead, I began with my banana bread recipe, and opted to add additional flour. This gluten free zucchini bread recipe was made with my own blend of gluten free cake flour. I link to it below.
