Today is Fat Tuesday, also know as Mardi Gras, though Mardi Gras festivities run from January through Fat Tuesday. It has an interesting history, which you can read here. Gluten Free Seafood Gumbo

Gluten Free Shrimp Gumbo with Rice

This spicy gluten free seafood gumbo consists of shrimp and red snapper and is a Cajun favorite, especially during Marti Gras. Gumbo stew is a Louisiana tradition and is famous for its dark roux (flour and butter). My mother was born in Louisiana; therefore, I think of her often when I make southern dishes. Gumbo is known for its dark roux and file spice. Adding in the holy trinity (onion, celery, and green peppers, some heat from ground cayenne pepper and hot sauce, and you have yourself an awesome creole dish. Feel free to substitute the red snapper and shrimp for your favorite seafood, firm fish, chicken, or sausage. If you read anything on this page, you must read how Alton Brown makes a dark roux!

Fluffy Gluten Free Biscuits

These gluten free buttermilk biscuits turned out amazing! Recently I developed a recipe for a substitute for Gluten Free Bisquick. While everyone really enjoys the recipe and has been raving about it, I found it a little too starchy. So, I improved upon the blend while creating this new gluten free buttermilk biscuits recipe. I used cornstarch as a base instead of potato starch and later added some additional potato starch. I was able to enjoy these biscuits without adding butter, straight from the oven. Every time I hit a milestone on how many Facebook followers I have, I ask my fans what gluten free recipe they would like me to create. Gluten free biscuits and gravy was one of the recipes requested. I asked the gentleman if you wanted white or brown gravy. He desired the white, southern-style gravy. I went one step further, and made a true southern gluten free biscuit and gravy recipe by adding sausage to the gravy. This is optional, or you can even use the vegan substitute I list below. You’ve heard of breadsticks that you dip into pizza sauce, right? Well, picture breadsticks shaped into balls with a little, or a lot of cheese and sausage inside, and it’s yeast-free. Heaven, right? And you can make them a little more guilt-free by using turkey sausage, as I did. They were so good, I skipped the sauce entirely. However, my father and husband thought they were too dry to eat alone. Let’s face it, it’s bread. It had a nice crunch on the outside crust which I loved!
