Jerk spice is a very hot and spicy seasoning mixture popular in Jamaica. It can be made applied to meat wet or as a dry rub. This gluten free version of jerk chicken can be made with mild peppers. I used canned green chiles. If you’re a brave sole you can use hotter chiles such as habanero and jalepeno peppers*. They pack a deadly heat, but I’ve provided some pointers for you in the tips section. Habanero peppers are the hottest chiles easily found in the U.S. and are a bit tangy. Jalepeno contain a moderate heat in comparison to habanero peppers, but is still too hot for me. They are also a bit sweet, similar to bell peppers. Gluten Free Chicken Mole (Mild)
Mole is a flavorful Mexican sauce that contains just a tad bit of chocolate. (Chocolate is great in chili, as well.) It usually contains plenty of hot chiles, but this gluten free chicken mole does not. Because chicken tenderizes so quickly it is a fairly fast recipe. When all is said and done you have a rich sauce covering moist, tender pieces of chicken. Instead of serving this with gluten free tortillas, you may serve it with soft naan bread (Indian flatbread). Peach Glaze or Peach Compote
In preparation for my new cake recipe that uses this peach glaze to substitute frosting, I thought I would share it with you now so that I can link to it in the recipe. It has all sorts of uses. You can add cinnamon to it and top ice cream, use it plain, or add hot spices such as cayenne, ginger, and chili powder. Baste your pork and chicken entrees using savory or hot spices. Homemade Sweet Potato Chips (Naturally Gluten Free)
With summertime approaching, and our already warm weather, I am picturing backyard barbecues and picnics on the horizon. What better way to celebrate than with a healthier snack. Rather than reaching for processed potato chips, or expensive natural ones, you can make your own right at home. The great thing about homemade sweet potato chips is that they are lower in carbohydrates compared to regular chips. When making them at home you can use a healthier oil, as well. Lower-Fat Gluten Free Coleslaw
Memorial Day is coming up soon, and classic dishes like coleslaw are often served. Whether you are having a barbecue, a picnic, or just eating in, this gluten free coleslaw recipe will fit the menu well. It is lower in fat than most coleslaw recipes as I use a bit of fat-free/non-fat Greek yogurt to substitute some of the mayonnaise. If you are on a dairy-free diet, feel free to use plain dairy-free yogurt. For others not needing a low-fat recipe, use all mayonnaise. Toasted Hemp Seeds Recipe for Bread and Salads
If you like a little crunch and a nutty flavor in your gluten free whole grain bread, this recipe for toasted hemp seeds will be a perfect fit for you. It’s very easy to do and takes very little time. You can toast any seeds, but hemp seeds in particular need to be toasted, as they are hard seeds. Other seeds such as sesame seeds don’t need to be toasted. You can use toasted hemp seeds not only on the tops of your bread, but inside, as well. Now, get to baking some gluten free bread!

Roasted Butternut Squash
In preparation for my upcoming butternut squash ravioli recipe I wanted to share my new roasted butternut squash recipe with you. Of course, once I create the ravioli recipe, I will link to this recipe. It is naturally gluten free, does not contain any allergens, and is very yummy! If plan on pureeing this for any reason, consider using a portion of butternut squash and and a portion of sweet potatoes. It makes it thicker and creamier without the use of cream or cheese. Mocha Frosting – or Coffee (Naturally Gluten Free)
In earlier years I was never a fan of buttercream frosting. However with age we our taste buds change. Actually, I believe we lose some. Since I have experimented with different flavors of frosting, I have come to appreciate them. This mocha frosting is one of my new favorites, especially on a rich chocolate cake. You can easily adjust the recipe to make coffee frosting with the tips provided. The key to a good buttercream frosting is how long you beat it. You want it to be airy and light, similar to mousse. Flourless Gluten Free Almond Cookies with Chocolate Chips
These gluten free almond cookies may be made with store-bought almond butter or home ground. You will find the directions provided below for how to do this yourself in your food processor or Vitamix blender. Gluten Free Osso Buco in a White Wine Sauce
Osso buco (also known as ossobuco) is my father’s favorite dish. He orders it whenever he sees it on a menu. It is an Italian recipe and when translated mean “hole of bone”. This is due to its succulent bone marrow. Perhaps this does not sound appealing, but you will have to taste it to appreciate it. The rich flavor of the marrow is what creates its rich sauce. Though you will find osso buco recipes that call for red wine, I chose to use white as it is traditional. If you desire an old school version add a bit of cinnamon. Many assume the tomato based sauce is traditional, but it is actually a modern version. Served over polenta or mashed potatoes and topped with gremolada (parsley, lemon juice, and garlic), this gluten free osso buco is a beautiful dish. (See vegan version in the Tips section below).
