Gluten Free Strawberry Chicken Salad

Image: Gluten Free Strawberry Chicken Salad Ingredients

I usually make this gluten free chicken salad recipe with apples, but did not have any, therefore, substituted the apples with strawberries. It turned out great. Strawberries are not quite sweet enough now due to the season, but in a few weeks they will be. By adding a little stevia, which I do even in my apple chicken salad recipe, it sweetens up just right. You can use this chicken salad atop a salad, in a sandwich, or on celery sticks or crackers for an appetizer. This recipe is gluten-free, sugar-free and low-cal if you use non-fat Greek yogurt instead of mayonnaise. A mixture of both is great, too! Continue reading “Gluten Free Strawberry Chicken Salad”

Healthy Sugar-Free Gluten Free Chocolate Truffles

Gluten Free Mashed Potato Chocolate Ganache Truffles

I was watching “Paula’s Home Cooking” on The Food Network channel the other day, and Paula showed how to make Chocolate Covered Potato Eggs (for Easter). Her recipe had a white filling and inspired this chocolate truffle recipe with walnuts I just created. My favorite See’s Easter egg has a chocolate cream and walnut filling, therefore, this is what I made today. I added cocoa powder and walnuts; substituted stevia and agave syrup for the powdered sugar; and changed its shape into the typical round truffle. This is a healthier truffle recipe than most. I dipped some in chocolate and froze them; rolled others in unsweetened cocoa powder; and others in walnuts. My husband found it hard to believe it contained mashed potatoes. Give this recipe a try. It tastes great and is so fun to make! Continue reading “Healthy Sugar-Free Gluten Free Chocolate Truffles”

Raw Almond Pistachio Avocado Ice Cream

Image: Avocado Ice Cream

This recipe is dairy free, refined sugar-free and additive-free. I love pistachio ice cream but have had trouble thinking of a way to make it green without using artificial food coloring. I recently learned that avocados may be used as a substitute for eggs. Do you see where this is going? A raw avocado ice cream recipe made with almond milk, but instead of using vanilla extract, as some may have thought, I used almond extract. Just delicious! It also contains agave syrup. Check out my recipe below. Continue reading “Raw Almond Pistachio Avocado Ice Cream”

Vegan and Gluten Free Stuffed Zucchini Recipe

I have been craving an old recipe of mine that I no longer can have due to my tomato allergies, but created this one as a substitute. There a ton of variations to this recipe which is great because you’ll never tire of it. You can either keep it vegan or add meat, cheese, etc. You can use traditional shaped zucchini or round ones if you can get a hold of some. The one I used in the photo below is from my garden. Low Fat Healthy Baked French Fries

Low Fat Baked French Fries

Let’s face it french fries that have been deep fried are high in calories. If you’d like a french fry lower in fat and calories just bake them. I’m all for low fat french fries! I recently purchased a Nonstick French Fry Baking Pan which allows the heat to rise form the bottom through holes in the pan, allowing browning to occur on both sides. A little olive oil spray makes them taste like regular french fries. UPDATE: I have successfully made these using a regular baking sheet. You may use russet potatoes, sweet potatoes, or golden or red potatoes. Guilt free French fries! What’s not to enjoy? Continue reading “Low Fat Healthy Baked French Fries”

Chewy Gluten Free Brownie Recipe

Gluten Free Chewy Brownies

This is my first stab at creating a gluten free brownie recipe. It turned out very chewy, just what I had in mind. They are not cake-like at all. I used potato starch in this one. Next time I may try using almond flour just because I love the taste of it, but this time I just added some chopped nuts. You can use your favorite nuts. I not only enjoyed the brownies, but I really liked the fact that there was not a lot of mess to clean up as I went along. Continue reading “Chewy Gluten Free Brownie Recipe”

Stuffed Gluten Free Potato Pancakes with a Variety of Optinal Fillings

Potato Pancakes

I have been planning to make gluten free potato pancakes for some time, now, and finally got around to making them. Gee, it’s been a decade or more since I have had them. Ahhh! – what a delight! I make them with fresh left-over potato pancakes, not instant potatoes. This recipe is gluten free and without any type of flour. I show the how-to by text and photo display.  This recipe covers making homemade mashed potatoes and potato pancakes, plain, and with a variety of fillings. Either way they are scrumptious!
