Potato Frittata with Pepperoni

Frittata is typically an Italian recipe, but you can make any type of frittata you wish. Frittata is similar to a quiche without the crust. This particular potato frittata is very satisfying, and very flavorful with the added pepperoni. Kids love the idea of a pizza pie, but frittata is an adult favorite, as well. You can substitute other sausages for this recipe. There are ways of lowering the fat and sodium content, which I discuss in this article. Frittata recipes make an inexpensive Sunday brunch or dinner along with a vegetable or salad. Continue reading “Potato Frittata with Pepperoni”

Different Cannoli Filling – with a Twist

Gluten Free Cannoli with Chocolate Potato Filling

I just posted my Chocolate Potato Truffles Recipe and was pleasantly surprised to find the texture of the filling to be very similar to the traditional ricotta cannoli filling, but this filling contains walnuts. If you’re looking for different cannoli filings, this is a great alternative! Often one adds chopped pistachio nuts at the ends of the cannoli, therefore I used chopped walnuts on these. The walnuts in the filling make a good substitute for the chopped chocolate in the traditional cannoli filling, but you can also use chocolate if you wish. I have recently used gluten free chocolate mousse as a filling on Easter and everyone really enjoyed it. I’ve also used Orgran’s Chocolate Mousse and with added powdered sugar and cocoa. My husband loved it and I know the rest of my family went crazy over this one. I sent the photo below to my sister ahead of time to make her drool! It worked! Raw Almond Pistachio Avocado Ice Cream

Image: Avocado Ice Cream

This recipe is dairy free, refined sugar-free and additive-free. I love pistachio ice cream but have had trouble thinking of a way to make it green without using artificial food coloring. I recently learned that avocados may be used as a substitute for eggs. Do you see where this is going? A raw avocado ice cream recipe made with almond milk, but instead of using vanilla extract, as some may have thought, I used almond extract. Just delicious! It also contains agave syrup. Check out my recipe below. Continue reading “Raw Almond Pistachio Avocado Ice Cream”

Vegan and Gluten Free Stuffed Zucchini Recipe

I have been craving an old recipe of mine that I no longer can have due to my tomato allergies, but created this one as a substitute. There a ton of variations to this recipe which is great because you’ll never tire of it. You can either keep it vegan or add meat, cheese, etc. You can use traditional shaped zucchini or round ones if you can get a hold of some. The one I used in the photo below is from my garden. This is recipe is great way to use up any produce you have that may soon spoil or wilt. My original intention was to only use vegetables and one fruit, but I was awfully hungry while making it and decided to toss in a potato and am glad that I did. It was very tasty and satisfying! Authentic Italian Gluten Free Spaghetti Sauce Recipe (Bolognese Sauce)

Image: Authentic Italain Gluten Free Spaghetti Sauce

My gluten free spaghetti sauce recipe is a bit of a modern version of the authentic Italian spaghetti sauce that my Sicilian grandmother used to make. I have included both the authentic ingredients as well as a few shortcuts I take. I sometimes use dried parsley, canned mushrooms, etc. You can use all fresh ingredients or opt to take the shortcuts, but they both taste wonderful.
