Spinach Rice

This spinach rice dish may be made with an Indian flare or a Chinese flare. Either way, it’s delicious. I chose to hide the bitter taste of spinach in this recipe. No bitterness at all! If anything it tasted a bit creamy, though, it is dairy-free. For a Chinese flare, use gluten free soy sauce. For an Indian flare, use butter and turmeric. If not egg tolerant, or vegetarian or vegan, skip the eggs. This recipe is very forgiving on amounts and ingredients. Gluten Free Challah Recipe

Gluten Free Challah Bread

Because the best gluten free dough is closer to a batter rather than a dough, it is very difficult to achieve a braided dough in a gluten free challah recipe. And since the braids in challah represent unity, I thought a fluted bundt pan may due the trick nicely, as the sections appear to be a representation of unity. However, you cannot use the bottom of the bundt pan as the top of your challah, since it is impossible to add the egg wash and achieve a nice browning from the bottom of the pan. After rising I attempted to cut some slices in the top to achieve a braided look, but it did not rise any more during the baking process, therefore, does not look braided. Not to mention the slits on the top did not look like a braid to begin with. I believe making the slits actually prevented further rising. Gluten Free Taquitos or Flautas

Gluten Free Toquitos Recipe

I cannot tell you how many times, prior to be on the gluten free diet, that I had taquitos that were flavorless! Added garlic, chicken broth and chiles (skip the chiles for gluten free kids) make these gluten free taquitos very flavorful. My oldest sister, who is quite the culinary critic, loved these, evidenced by her second helping. You can make these corn free  by using gluten free flour tortillas (see my gluten free tortilla recipe or one brand of gluten free flour tortillas). Gluten Free Fried Bananas

Fried Bananas (Naturally Gluten Free)

Don’t know what to do with over-ripened bananas? Make fried bananas! Fry them up in about 5 minutes and top them your favorite topping or the buttery sweet sauce straight from the pan. It’s truly an easy gluten free dessert recipe you cannot go wrong with. It’s a non-alcoholic version of bananas foster. Next time I make this recipe I’d like to try dredging the cut side of the bananas in almond flour before frying. That just sounds perfect to me. Wish I would have thought about it sooner. Enjoy! Gluten Free Green Pea Cake

This cake is to die for, especially if you enjoy chocolate and sweetened whipped cream.  But you ask, “Pea flour recipes?” Yes. Peas are part of the legume family, and when ground into a flour may be used in larger quantities than other bean flours, as they are not as strong or bitter and the pea flavor is more easily hidden among other flours. Green pea flour is wonderful to bake with, as it is very high in protein, 4 grams of protein in every 1-1/2 tablespoons. No need to run out and purchase green pea flour. If you own a coffee grinder, just purchase a bag of green split peas at your local grocer and grind them up into a fine powder. If it appears to be gritty, don’t worry. Delicious Gluten Free Chinese BBQ Pork (Soy Free and Tomato Free)

Chinese BBQ Pork

This Chinese BBQ pork recipe may be made soy free when using my soy free barbecue sauce recipe which calls for my soy free soy sauce recipe; or with the use of any gluten free soy sauce or barbecue sauce. Traditionally, Chinese BBQ pork does not call for tomatoes or ketchup, though some use it. This recipe is tomato free. And if you’re not on a gluten free diet, of course, you may use any brands you desire. This recipe calls for a slow cooker (crockpot), and may be followed by broiling the meat, which is optional. As you can see in the photo that it is sticky, and you may make it crisp on the outside, if you wish. No matter how you prepare it, in the end, it is flavorful, inside and out.
