The days when my children were young and they would beg for Rice-A-Roni have been gone for sometime, but the good memories linger on. During my grocery shopping this week, I passed by the Rice-A-Roni shelves and thought back. Realizing I had no idea what the ingredients were in it, and was afraid to look. Besides the things I could barely pronounce, I realized some people may miss it. I not only wanted to create a gluten free Rice-A-Roni-style recipe, but a healthier one. I definitely need to create a new gluten free rice recipe soon, anyway. This is a great way to get kids to eat broccoli, as they won’t recognize the taste buried in the other flavors. Gluten Free Chicken Shirataki Noodle Salad in Lettuce Cups

Gluten-Free Asian Chicken Noodle Lettuce Cups

If you’re looking for a light, quick, yet elegant meal, look no further! Shiratiki noodles contain very little carbs, therefore, this is great for a gluten-free low-carb diet, and those with diabetes. I needed a meal in 30 minutes or less, therefore, I did not marinate the chicken, but should I have had time, I definitely would have, though calories are saved by not doing so. I’ve added how to marinate the chicken at bottom of this page. You can add vegetables to this recipe such as green bell pepper or parboiled carrots, etc., and saute them along with the chicken. This is a gluten free recipe that I would serve anyone – gluten-free dieter or not! This is my favorite out of all of my shirataki noodle recipes. The other is used in a soup. Enjoy! No-Cook Gluten-Free Dairy-Free Sugar-Free Chocolate Mousse

Raw Chocolate Mousse

Imagine a no-cook sugar-free chocolate mousse that is also gluten-free, dairy-free, sugar-free, soy-free, corn-free, vegan and more! – that takes 5 minutes to whip up! Of course, you’ll need to soak one of the natural sweeteners, but that just takes about 4 hours. What is that sweetener? Dates! If you’re diabetic or low-carb, use a bit of stevia instead. Inspired by a few of my Facebook friends, I decided to create more gluten-free, sugar-free recipes. I’ve been meaning to grill some fruit but haven’t cleaned the grill yet. Unexpected guests? This is sure to please, as well as a great conversation topic! You can be sure I’ll be creating several versions of this recipe in the very near future. Perhaps with strawberries and bananas (not avocado and strawberries because that will turn to a brown color), other fruit and added nuts, like macadamia nuts or walnuts. With summertime here, it’s great not to bake! Enjoy and stay healthy!

Gluten Free Empanadas

Empanadas are a popular pastry found in the Caribbean, the Philippines, Latin America, Portugal, and Spain. The fillings are typically gluten-free. They are filled with various ingredients, whether sweet or savory, depending upon which part of the world they are made. They tend to be on the dry side, therefore, I used a rich creamy, flaky dough in my gluten free empanadas. Adding a juicy filling is advised, however, it will most likely leak out of the pastry dough and burn while baking. Cheese is a common ingredient in savory empanadas to avoid this dryness, and prevent leaking. You can add ground meat: chicken, beef with cheese, or plain cheese, along with sauteed vegetables and spices. If you find them dry you can make a dip, as well -an avocado dip, salsa, sour cream, etc. This gluten-free recipe is made on the Argentina flavor side, yet a little different. What type of filling will you make? Check out the different types of empanada in different parts of the world and choose your favorite or experiment! You’ll enjoy making gluten-free empanadas because you can be so creative!

Sugar Free Dairy Free Gluten Free Doughnuts – Baked

I haven’t had a doughnut (donut) since I started my gluten-free diet. I didn’t really miss them, but enjoy the challenge of gluten-free baking. These gluten free doughnuts are baked, making them healthier than the standard recipes, as they are usually deep fried. In addition, some whole grain flours were used to provide additional health benefits, as well as agave and molasses. They taste much like the real thing! I think you’ll be very pleased. You can play around with this recipe substituting 1/4 cup of your favorite flour for one of the others. Add in your favorite baking seasonings or extracts, too. Experiment and have fun! Gluten Free Pizza Crust made with Polenta

While flipping through Food & Wine magazine I noticed a photo of a polenta pizza crust and suddenly found my mouth watering. I love polenta and pizza, but combining them is an ideal gluten free pizza crust for yours truly! Making gluten free polenta pizza crust is very easy. My husband and I were able to enjoy two different pizzas, both which cooked together in the oven. How simple is that? Gluten Free Cheddar Cheese Potato Chips Recipe (or Plain)

Homemade Gluten Free Cheddar Potato Chips

One would think making your own gluten free cheddar cheese potato chips would be easy an easy endeavor, however, it took much research and finally experimenting on my own to create this recipe. I wanted a fried potato chip, but not too brown (burnt tasting), as I saw in many other recipes online. I had other concerns, as well. Did I soak them in cold water first? If so, did this make them more crisp or just prevent browning of the raw potato? Berry Cheesecake Gluten Free Pancakes

Gluten-free Berry Cheesecake Pancakes

In an attempt to use up some cream cheese I had in the refrigerator, I thought about creating a cream cheese gluten free pancakes recipe. At first, I thought of just spreading the cream cheese between the pancakes. Then I thought, what about if I could taste gooey chunks of cream cheese in the middle? – and then top them with strawberries, blueberries or blackberries? That would make a cheesecake pancake! I ended up adding some to the batter creamed, and the rest in chunks. Oh my! – very filling and much like a dessert without all the refined sugar!

Gluten-Free Chili Without Beans and Tomatoes

No Bean No Tomato Chili

As most of you know most of my gluten-free recipes are made without tomatoes due to food allergies. This one is no different. I tried to make this chili recipe more on the milder side so that it is kid friendly. If making it for children, only use half the amount of cayenne or leave it out all together. You can substitute the little sugar for anything sweet: agave, molasses, etc. I have made a similar recipe before, but it contained red and green bell peppers; and another with meat and green chile.
