Pate choux in French is a dough made simply with eggs, flour, and sugar. In America, this dough is used for cream puffs. This particular gluten free cream puff recipe is shaped as rings instead of the typical puff and is filled with a caramel whipped cream. The real Fench name for this dessert is Paris Brest. They make a spectacular presentation. I added toasted almond slices to mine and a sprinkle of confectioners’ sugar. You can use regular whipped cream and add strawberry sauce, as I did in my original gluten free cream puff recipe (see below link). Enjoy! This crunchy gluten free bread sticks recipe is so crunchy, I just had to share it with you. The recipe was inspired by the ingredients in Schar’s Gluten Free Breadsticks. They are much harder and crispier than Schar’s, but in gluten free bread sticks, this is a good thing. Flourless Gluten Free Chocolate Roll Cake – Roulade

I love the fact that this gluten free chocolate roll cake bakes so quickly compared to regular cakes. This recipe especially bakes fast because it does not contain flour. Instead, it contains mostly eggs and chocolate. I was so excited to give this a try I even purchased a jelly roll pan just to make this cake. The pan turned out to be perfect size for so many other things (small batch cookies, cinnamon rolls, sheet cakes, and baking rolls, to name a few.) Meanwhile, the cake turns out light, yet has a rich chocolate flavor. You have a choice of fillings and toppings, one of each may be made dairy-free. I hope you enjoy this recipe. It looks like a huge Hostess Ding Dong. Doesn’t it? You can make it taste it like one, too, if you use the fluffy white frosting as a filling. I prefer cream cheese frosting or whipped cream, though. Royal icing is hard white icing often used for decorating. It can also be made soft by adding glycerin. The only difference between regular and gluten-free royal icing recipe are the brand you use to make it. I have included the brands that meet the guidelines for gluten-free labeling. Royal icing isn’t always easy to make because you need to reach the correct consistency for the best results. I have included some tips to make your job easier. Gluten Free Calzone Recipe

The trouble most people run into when developing a gluten free calzone recipe is the lack of starch in the flour blend. Though this one is high in starch, it surely makes it easy to fold and handle the dough. You can fill it with your desire fillings. I have included several suggestions below. Soft and Chewy Gluten Free Pumpkin Cookies

I must admit, this gluten free pumpkin cookies recipe took 10 different batches to perfect. Now they are perfect! If you desire a crisp bottom, chewy outside, and a soft chewy inside, you bake them for 11 – 12 minutes. The longer you bake them, the crisper the bottom becomes. For a cookie that is soft all over, you bake them for 10 minutes. Soft and chewy was a request of a couple of my Facebook followers. These are very lightly pumpkin flavored.
