Gluten Free Low Fat Chicken Salad, Indian Style

Dr. Oz recently shared a canned salmon salad recipe on his show. I do not eat salmon, but adapted his recipe to my liking and around my food allergies, used canned chicken breast instead; and added the mixture to my gluten-free bread roll. I love Indian food and the turmeric was a refreshing touch! If … Continue reading Gluten Free Low Fat Chicken Salad, Indian Style

Gluten Free Strawberry Chicken Salad

I usually make this gluten free chicken salad recipe with apples, but did not have any, therefore, substituted the apples with strawberries. It turned out great. Strawberries are not quite sweet enough now due to the season, but in a few weeks they will be. By adding a little stevia, which I do even in … Continue reading Gluten Free Strawberry Chicken Salad

Tri-Spiced Gluten Free Onion Rings with Dipping Sauce

These gluten free onion rings are another great recipe from Gluten Free Chef Rob, Robert Landolphi’s Gluten Free Everyday cookbook. I cannot explain well enough how crunchy and flavorful they turn out and what a nice thick batter this makes. They’re a must try for any onion ring lover, gluten free or not!

Gluten Free Avocado Chicken Salad

I love avocados and I thought, “Why not mix it up with chicken for an avocado chicken salad sandwich or atop a salad?” I allow myself a serving of avocado once a week, as a treat. Adding a little Greek yogurt makes this recipe even less in calories, or use mayonnaise for richness, or neither. This is a quick, easy avocado chicken salad recipe that anyone can make. And it’s great for using up leftover chicken. You’ll see the sandwich photo below which shows the dairy-free version, and the salad photo showing the dairy version Continue reading Gluten Free Avocado Chicken Salad

Parmesan Beef Burgers Recipe – Gluten Free – Delicious!

Looking for a great beef burgers recipe? I have been eating dull hamburgers with or without cheese all of my life, 51 years, and thought it was time for a change! Okay, so I haven’t been eating them for a full 51 years, but that’s close enough. I’m not Celiac, therefore, cooking with gluten for my husband is not a problem. I was making him a gluten pizza tonight as an extra birthday present and did not want to really cook a big meal for myself. I knew I wanted to add some steak sauce or something. I decided to make a mini meatloaf with more of a steak sauce taste. I wanted something filing since I wasn’t going to be having bread or hamburger bun. I decided instead of adding gluten free oats, as some meatloaf recipes contain, but to hide the oatmeal by grinding into a flour first. I added just about anything I really liked with beef. Voila! – the best beef burgers recipe I have ever eaten! I ended up topping it off with a guacamole sauce. Yum! See both recipes below.
