Over a year ago I tried to make gluten free pita bread, but was under the misconception that rising them prior to rolling would be fruitless. Now that I’ve experimented more, I know this not to be the case. When someone recently asked me for a yeast-free pita bread recipe, it was a reminder that I needed to give them another go. And I’m absolutely thrilled how they turned out. I don’t know if it’s because it’s been about 10 years since I’ve had one or not, but they taste like gluten pita bread to me! This recipe was adapted from its gluten cousin Pita Bread Recipe on About.com. You can serve this pita bread with hummus dip, or use it as substitute for gluten free bread, as I did in one of the images below, with chicken salad. Enjoy! Gluten Free Oat Bread (or Sorghum)

I had posted a link to the Gluten Free Prairie Oat Bread I had developed for Gluten Free Prairie awhile back on my social media channels. However, that gluten free oat bread recipe was developed specifically for Gluten Free Prairie Oats, as their product produces a higher rise and a lighter bread. So, I thought you’d all appreciate a similar oat bread recipe which included dairy that can be used with any gluten free oats. And here it is! Using dairy guarantees a higher rise and less, if not any, shrinkage. Gluten Free Baked Beans

My husband signed me up to bring baked beans to the family reunion. Therefore, I made gluten free baked beans. I’m allergic to tomatoes and haven’t had Van de Camp beans in ages, as it has tomatoes. However, Bush’s baked beans are tomato-free. Yes! I haven’t made these in decades! My husband’s idea was for bacon to be added. And since I’m a worry-wort as far as never making enough, I went for it, as it added volume to the recipe. And I’m really happy that I did, as it was a perfect addition, as far as flavor goes. And you skip the bacon if you’re watching your weight or cholesterol levels. The onion, garlic and bell pepper provides enough flavor. I hope you appreciate this recipe. My husband was delighted! Gluten Free Rosemary Chicken

This rosemary chicken is another healthy, gluten free recipe contributed by Joy Bauer from her celiac disease recipe collection. Whether you grill it outdoors or use a grilling pan, this chicken recipe is almost like having breaded chicken. It has a wonderful crunch to it. Yet there are no bread or bread crumbs involved, making it low in carbs. And because you don’t use much oil, it’s low in calories, as well. This spinach rice dish may be made with an Indian flare or a Chinese flare. Either way, it’s delicious. I chose to hide the bitter taste of spinach in this recipe. No bitterness at all! If anything it tasted a bit creamy, though, it is dairy-free. For a Chinese flare, use gluten free soy sauce. For an Indian flare, use butter and turmeric. If not egg tolerant, or vegetarian or vegan, skip the eggs. This recipe is very forgiving on amounts and ingredients. Delicious Gluten Free Chinese BBQ Pork (Soy Free and Tomato Free)

Chinese BBQ Pork

This Chinese BBQ pork recipe may be made soy free when using my soy free barbecue sauce recipe which calls for my soy free soy sauce recipe; or with the use of any gluten free soy sauce or barbecue sauce. Traditionally, Chinese BBQ pork does not call for tomatoes or ketchup, though some use it. This recipe is tomato free. And if you’re not on a gluten free diet, of course, you may use any brands you desire. This recipe calls for a slow cooker (crockpot), and may be followed by broiling the meat, which is optional. As you can see in the photo that it is sticky, and you may make it crisp on the outside, if you wish. No matter how you prepare it, in the end, it is flavorful, inside and out. High Protein Gluten Free Crepes – Blintz – Cheese Rolls (Flourless)

I needed to create a cheese rolls recipe, often known as blintz, using tapioca flour starch for an eHow video and thought I would include dairy-free options. Though you may use cow’s milk for a creamier crepe, dairy-free milk or even water will work. I filled my crepe with chopped sauteed Swiss chard with garlic, a mixture of sauteed onion and red bell pepper, topped with a little Gluten Free Bechamel Sauce. Though these are high in egg, they do not taste eggy. Fill with anything sweet or savory. A crepe filled with cottage cheese is known in the Jewish community as a blintz. Others fill them with cheese and roll them up like a burrito around all sides and bake until warm. Usually, they are then topped with a fruit sauce. Gluten free crepes are like an empty canvas. If you’ve never had latkes you’re in for a treat. These are full of flavor and may be topped with the traditional and optional sour cream or warmed apple sauce. Though they are traditionally served during Hanukkah, they may served any time of the year. Perhaps you already have a favorite gluten free latkes recipe, but you have problems with turning them over in one piece. You’ll be able to enjoy these  latkes by applying one simple step. Gluten Free Cream of Chicken Soup Recipe

This gluten free cream of chicken soup recipe is made with fresh ingredients. Add to other soups for an easily digestible protein. Using chicken breasts is not recommended, as it is too dry and creates a gritty texture. Brown chicken parts add more flavor. Ensure that the chicken broth you use is gluten free, or use the broth/water used to boil the chicken, though it will not have as much flavor as pre-made chicken broth. Enjoy this gluten free cream of chicken soup recipe. My father most certainly did!
