Udi’s Style Gluten Free White Bread Recipe

A couple of days ago I made my first attempt at making a copycat recipe for an Udi’s-style gluten free white bread recipe. It was a flop. Today I took another stab at it and created a decent gluten free white bread recipe! Yeah! It’s not perfected yet but still tasted wonderful, even after it cooled. I used many of the ingredients which Udi’s white bread contains, however, the rice flour is just a little grainy. You can’t notice it in a sandwich, but you can notice it a little when eating it plain. I’d really rather use sorghum flour instead of rice flours, but just had to give this a go. Meanwhile, the texture of this bread is wonderful! -similar to sourdough sliced bread. It has that Udi’s chew, yet soft. And this recipe makes a much larger loaf than Udi’s white sandwich bread. Gooey Gluten Free Brownies Recipe

Tropical Traditions sent me a jar of their gluten-free organic brown rice syrup to try. My first thought was either to use it in an ice cream or in a baked dessert. Brownies, I thought! Oh, I couldn’t get them out of my mind! I already have a couple of gluten-free brownie recipes, however, I really was looking forward to making a healthier one, and one that was super gooey! I performed a search online for brown rice syrup recipes and stumbled upon just what I had in mind, a brownie recipe made with brown rice syrup! I converted it to gluten-free brownie recipe and 1 1/2 times’ed the recipe, as it originally made such small brownies. So, here it is – my newest gluten-free brownie recipe. It’s ooey, gooey, sticky and tastes almost like a chocolate caramel. I added a bit of flaxseed meal to make it a little more healthier, but using organic brown rice syrup was such a great start. Brown rice syrup may look like agave, but is barely sweet, and especially when this recipe is made with bittersweet chocolate. Definitely a decadent delight. Enjoy! Gluten Free Pizza Crust made with Polenta

While flipping through Food & Wine magazine I noticed a photo of a polenta pizza crust and suddenly found my mouth watering. I love polenta and pizza, but combining them is an ideal gluten free pizza crust for yours truly! Making gluten free polenta pizza crust is very easy. My husband and I were able to enjoy two different pizzas, both which cooked together in the oven. How simple is that? I decided to use my gluten free quick phyllo dough recipe instead of my gluten-free cannoli shells since the cannoli shells are deep-fried and the phyllo dough may be baked. One would think making your own gluten free cheddar cheese potato chips would be easy an easy endeavor, however, it took much research and finally experimenting on my own to create this recipe. I wanted a fried potato chip, but not too brown (burnt tasting), as I saw in many other recipes online. I had other concerns, as well. Did I soak them in cold water first? If so, did this make them more crisp or just prevent browning of the raw potato? I’m a sucker for anything watermelon including watermelon beverages both with or without alcohol. And a fresh watermelon martini is one of my faves, actually any melon. Martinis are naturally gluten-free, as the vodka is distilled, which most manufacturers claim removes any gluten. You will find that some vodka brands are made from wheat, rye, barley and fortunately, potatoes. I like to play it safe and use a potato vodka, but I have only tasted two, and do not care for either unless they are mixed with a lot of something sweet.
