Gluten Free Sweet and Sour Chicken

Gluten Free Sweet ad Sour Chicken over Rice

This gluten free sweet and sour chicken recipe was adapted from a recipe in Food and Wine magazine. The sauce may be made thick or more saucy and the sauce may be pureed, if desired. My version is lower in calorie and fat, as it is skinless. Serve it atop brown or white rice. Either way, this a gourmet treat, like no other gluten free sweet and sour chicken you’ve ever had! Lean Gluten Free Country Fried Steak with Gravy

Lean Chili Country Fried Steak and Gravy

My husband has been doing most of the grocery shopping lately. When I am not specific in what I would like in the meat department there is no doubt he will show up with something  I would have not chosen. He came home with cubed steak the other day, and I just couldn’t bare to just fry it plain. I don’t like cubed steak, as I’d prefer to have either my meat ground or whole – not beaten to death in order to make it tender. However, there is a correct way to tenderize tough cuts of meat like round steak. Continue reading “Lean Gluten Free Country Fried Steak with Gravy”

No Rise Egg Free Gluten Free Bread or Rolls

Gluten Free Egg Free Bread

I had a request for an egg free gluten free bread and decided to create this one. Though it is not dairy free, you may be able to experiment with it on your own. In deciding in which direction to take, I ran across a gluten free buttermilk bread recipe which only called for starches, and no need to rise, though it contained yeast. I was very curious how this would turn out. I tweaked it a bit before experimenting and ended up with what I believe to be the most flavorful white gluten free bread yet. I did not allow it to rise, though next time I definitely will, as it is just a bit heavy, but perfect for a French loaf or rolls. I didn’t care for the heavyweight in the sliced loaf, though it is definitely kid-friendly. Fresh out of the oven, it is to die for! The French loaf crust was a bit crunchy and the crust on the rolls was soft. Enjoy!

Gluten Free Vanilla Wafers

Gluten Free Vanilla Wafers - Round

I have been wanting to create a gluten free vanilla wafers recipe for sometime now. It’s finally here. Now, you can make that banana cream pie or banana pudding you used to make. This recipe was adapted from Food Network’s Chef Alton Brown’s recipe for Vanilla Wafers. They are just wonderful. I’m thinking of replacing my gluten free milano cookies recipe for this recipe instead. Whether you make them bite size or regular size, they are a treat. They brought back some great memories from when I was young, as well as when my kids were young. There are a couple of variations which you can check out below in the Tips area. I hope you enjoy them.

Spinach Rice

Spinach Rice

This spinach rice dish may be made with an Indian flare or a Chinese flare. Either way, it’s delicious. I chose to hide the bitter taste of spinach in this recipe. No bitterness at all! If anything it tasted a bit creamy, though, it is dairy-free. For a Chinese flare, use gluten free soy sauce. For an Indian flare, use butter and turmeric. If not egg tolerant, or vegetarian or vegan, skip the eggs. This recipe is very forgiving on amounts and ingredients. Another gluten free recipe to add to your favorites in which you can get creative. Enjoy! Continue reading “Spinach Rice”

Gluten Free Mexican Casserole (TexMex)

GF Mexican Casserole

I was going to make pupusas which contain the same basic ingredients as this gluten free Mexican casserole, but you have to make patties out of the cornmeal and stuff each one individually, seal it up and then fry them. Being lazy, I thought, “Why not just make a one dish casserole?” And I’d prevent the higher fat fried food, as well! This dish can be made with leftover ground beef or bison, chopped chicken or turkey, tender chopped beef, and more. Add cheese to the mixture, or not. I added mine on the time to keep some form to the casserole. It was delicious, but the key is using black refried beans instead of regular. Enjoy!
