Happy Easter everyone! For those staying home on a tight budget, making a gluten free meatloaf surrounding boiled eggs may make your Easter special. This easy gluten free recipe takes just two simple additional steps. You may use your choice of meat: ground beef, chicken, lamb, pork, or a combination thereof. I hope it makes your meatloaf and Easter a special one.

Gluten Free Meatloaf with Boiled Eggs

Adding boiled eggs to your meatloaf not only makes it attractive, but stretches the budget, as well.

Ingredients:

Instructions:

  1. Places,eggs in a saucepan, cover with water by at least one inch. Make sure there is plenty of room in the pan for the eggs to rock up and down during boiling. Boil for 10 minutes; remove with a slotted spoon; immerse in a cold ice bath (water and ice) for 10 minutes; peel; and set aside.
  2. Make the gluten free meatloaf recipe, linked above, or your favorite gluten free meatloaf.
  3. Add half of the raw meatloaf mixture to a loaf pan and create one or two wells for your egg(s). Then add the remaining meatloaf mixture on top to encase the egg(s).
  4. Bake as directed.

Tips

If using ground chicken, it best to add some pork or beef with the chicken, as chicken alone tends to be dry.
