Called shaomai in Japan and siomai in the Philippines with slight variations, they are often served at dim sum (Chinese-style brunches where they serve several small appetizers).  Elsewhere, they are served as appetizers as well as meals. A chef at the Pelicano’s restaurant at Hyatt Zilara Cancun created this twist on Caesar salad dressing as a solution for my citrus allergies. I fell in love with it and so has my family/guests. Traditional Caesar salad dressing contains lemon juice, olive oil, raw or coddled egg yolk, Worcestershire sauce, garlic, and black pepper. This version contains only basil pesto sauce and a little additional olive oil. It is much more figure-friendly. This dressing is extremely easy to prepare and will impress your guests. While staying at the all-inclusive Hyatt Zilara in Cancun, Mexico last week, their bakery served these little gluten free apple coffee cakes with streusel topping. I absolutely fell in love with them! It was so nice to have a few gluten free treats. I created a duplicate recipe for you. Of course, I made the lower-fat version after indulging so much on vacation. In the cake, I used mainly dairy-free margarine and non-fat Greek yogurt instead of butter and sour cream. Enjoy! So, I got to work and created a copycat King Arthur Gluten Free Bread and Pizza Mix recipe. Make this mix at a fraction of the cost of its original, which goes for about $7 per box plus shipping and $27 for a pack of 3 on Amazon. Each box makes one bread or two 12 – 14-inch pizza crusts. This wonderful southern pecan pound cake is made less fattening by two simple changes without sacrificing on moisture and flavor. Of course, you can make the full-fat version as well. I made it low dairy, but you can make it completely dairy free without using hard to find ingredients. My gluten-eating neighbor gave it a smiley face, three hand claps, and a thumbs up.
