Pâte Sablée is a shortbread crust that is tender and often used to make tarts. The crust is made up of one part fat, (usually butter) and two parts flour. In this gluten free shortbread crust recipe, I made little changes to this rule. Pâte Sablée is not traditionally flaky. Gluten Free Pie Crust – Perfect for Double Crust

This gluten free pie crust is awesome to work with! I developed it for KitchenAid’s new 13-Cup Food Processor with ExactSlice System. It’s the perfect gluten free crust! If you’d desire, you can even weave a top lattice crust using this dough. It is a lighter crust than typical pie crusts, similar to a pâte brisée, which is a half fat (butter and/or shortening) and half flour ratio. However, in this recipe, I used quite a bit more flour. I just wanted to lighten up a regular crust a bit. It turned out an amazing gluten free pie crust, as it was not dry at all, but moist, flavorful and flaky. Gluten Free Turkey and Cranberry Pie

Imagine your favorite Thanksgiving fixings wrapped in a flaky gluten free pie crust. You can this pie with just the cranberry sauce and creamy turkey filling, or even add in some stuffing. This idea appealed to me, as turkey, cranberry and cream cheese sandwiches is my favorite way of consuming leftover turkey, but this now on my list of faves. Enjoy this gluten free turkey pie!

Someone recently asked me if I had a gluten free cherry pie recipe, and it got me thinking. It is my husband’s fave, though I do not care for it. I thought I would make him a gluten free treat and try one of the gluten free pie crust recipes from “Gluten Free Cooking For Dummies®“.  Because all flours measure differently, my dough ended up very crumbly. So, I added a bit of shortening to soften up the dough which makes crusts nice and flaky, too! I only had 2 cans of cherry pie filling, but really needed 3 for my pie pan, but it worked out alright anyway. Please make sure you read the labels of any pie fillings. Quick Gluten Free Phyllo Dough – Gluten Free Filo Dough

This gluten free phyllo dough recipe (or gluten free filo dough) is so easy to make compared to traditional recipes! Fortunately, for those of us on a gluten-free diet, we finally have an advantage in baking without gluten. Gluten is not our friend in attempting to create a flaky crust. Flakiness is what is needed in phyllo dough. This is my first attempt at creating a gluten free phyllo dough recipe. I began with my tart crust recipe and made it more flaky and crispy. Phyllo dough can be used with sweet or savory fillings, such as pastries, croissants, meats or cheese fillings and more. Yum, right? For a filling I used gluten-free custard which I use in my gluten-free cream puffs and for crème brûlée. What will you use for a filling? The crust turned out flakier than any crust I have ever made! I was so pleased. All those interviews with all of those gluten-free experts and chefs really really paid off. Gluten Free Strawberry Shortcake Ice Cream

Traditional strawberry shortcake recipes are made with layers of angel food cake with a layer of whipped cream or strawberries and topped with one of the same. I used a plain gluten-free cookie recipe to line a ramekin; baked it; and tossed it in the freezer for a couple of hours. Once frozen I made some homemade vanilla ice cream; added a layer of it on top of the cookie; then a layer of strawberries in syrup; then another layer of ice cream; topped it all with sweetened gluten-free whipped cream and slices of frozen strawberries; and froze.
