It’s strawberry season again and I am delighted! Sorbet is gluten free, naturally, but not always egg-free. This strawberry sorbet recipe includes several choices of ingredients. Due to my citrus allergies I used cream of tartar in place of lemon juice, but if I could have use lemon juice, and suggest you do for a more flavorful sorbet. Pineapple juice or orange juice will also work well. As a thickening agent you can either use a food starch or egg white, whichever works best for your diet. If you are watching your sugar intake or prefer a refined sugar-free version you may use agave nectar/syrup in place of simple syrup (sugar and water heated). Adding a natural food coloring will make it look more appetizing, but it is not necessary. Select Tea makes natural ones. If you do use food coloring, you are not limited to red. Gluten Free Horns
A crisp, flaky pastry is something many people miss on a gluten free diet. I decided to create a recipe for gluten free horns because I have been wanting to test out my cream horn molds. I decided to use my gluten free quick phyllo dough recipe instead of my gluten-free cannoli shells since the cannoli shells are deep-fried and the phyllo dough may be baked. Dairy-Free Gluten Free Sandwich Bread Recipe: Oat Bread (or Sorghum)
I have been experimenting with this gluten free sandwich bread recipe that can be used for sandwiches and I have found that adding additional egg white turns out a much softer bread dough. It was heaven! – much like a homemade white bread texture, but not as starchy because I used mainly oat flour. I tried adding one additional large egg to my original gluten-free oat bread recipe and it turned out much better! Instead of adding 4 large egg whites, as mentioned in the recipe below, I added 2 large and 2 extra large. I have found that the more egg white you add, the larger and softer the bread. Gluten Free Frittata Muffins
Frittata is naturally gluten-free, depending upon the filling. These little muffins are ideal because you can make them healthy, vegetarian, cheesy and more! They would be great to make over the weekend so that you can have breakfast ready for you before you head on out the door on weekday mornings. In addition, they make a wonderful and attractive dish for your guests, whether it is breakfast, brunch or lunch! If you have a mini muffin pan you can even make adorable appetizers! Gluten Free Cracker Recipe: Whole Grain
This was my first attempt at creating a gluten free cracker recipe. I was really anchoring for a healthy gluten-free snack made from whole grains. They compliment a dip very well. Avocado and hummus are my faves! They have a bit of a nutty flavor due to the teff and millet flours, a great way to get fiber and whole grains. The thinner you roll them, the crispier the cracker. Perhaps you already have a favorite gluten free cracker recipe. And perhaps and this will inspire you to use a little whole grains in it next time. Enjoy!

Berry Cheesecake Gluten Free Pancakes
In an attempt to use up some cream cheese I had in the refrigerator, I thought about creating a cream cheese gluten free pancakes recipe. At first, I thought of just spreading the cream cheese between the pancakes. Then I thought, what about if I could taste gooey chunks of cream cheese in the middle? – and then top them with strawberries, blueberries or blackberries? That would make a cheesecake pancake! I ended up adding some to the batter creamed, and the rest in chunks. Oh my! – very filling and much like a dessert without all the refined sugar!

Gluten Free Roasted Red Pepper Mashed Potatoes
I went to my favorite Italian restaurant that caters to those on a gluten-free diet and they made up something special for me, along with their delicious roasted red pepper mashed potatoes! Ever since I have been meaning to create my own recipe. These can be made dairy-free by using a butter or margarine substitute, however, I used butter on mine. I thought my husband who likes to eat American style, meat and potatoes, may not enjoy these gluten free roasted red pepper mashed potatoes over regular mashed potatoes, but he did! Gluten Free Curried Grilled Halibut
Dr. Claudia Pillow provides us with this healthy recipe for grilled halibut which calls for curry, and explains the health benefits of this little wonder spice.
Curry powder contains turmeric. In India, turmeric is promoted as an anti-inflammatory herbal remedy and is said to produce fewer side effects than commonly used pain relievers. Some practitioners prescribe turmeric to relieve inflammation caused by lupus, arthritis, muscle sprains, swelling, and pain caused by injuries or surgical incisions. It is also promoted as a treatment for rheumatism and as an antiseptic for cleaning wounds. In addition, turmeric contains the antioxidant curcumin, which has been found to hinder the growth of mutated cells associated with cancer of the breast, skin, and colon, as well as lymphoma. Gluten Free Tex Mex Salad
I didn’t feel like cooking the other night and my husband suggested a large gluten-free salad. I started with lettuce and started adding ingredients one at a time, and ended up with this wonderful Mexican salad, which I thoroughly enjoyed! You can top it off with broken gluten-free tortilla chips. I had some blue corn tortilla chips on hand. It made a bit colorful, as well.
